Have you met our awesome Exec Sous Chef yet? Sebastian leads the kitchen team at Astera, upholding our standards for excellence, zero waste, & high level vegetable cookery. He provides leadership to the kitchen team, working closely with Chef Aaron developing the ever evolving menu.

Born and raised in Gettysburg, Pennsylvania, Sebastian grew up loving food, with dreams of being a chef watching shows like Hell’s Kitchen and Chopped. He started cooking at the age of 10 in his aunt’s 24-hour diner and was instantly hooked. Since then, Sebastian has worked his way through kitchens in California, Washington DC, and Denver before joining Astera here in Portland

Sebastian is driven by his love of food, a pursuit for excellence, and a passion for zero waste. He is dedicated to offering memorable experiences to our guests every night while furthering the art of vegetable cookery.

And while cooking is his career passion, his true passion lies with his beautiful and wonderful partner, Hannah “Banana” Hartzheim, for whom he plans to spend the rest of their glorious life together raising many beautiful and perfect babies along with their puppy Nandor. by @astera_pdx

Look at these amazing folks (and me, too)! Had such a great time hanging in San Francisco with these talented and wonderful people. Gargouillou of Late Spring. Asparagus from Pheasant’s Eye with @groundworkorganics favas and pickled green and red ripe strawberries, Zephyr squash and Nantes carrots…pickled rhubarb, herbs and flowers from our garden. Served with a basil and dill emulsion and lovage essence. by @astera_pdx
