Don't get me wrong, I'm not knocking sourdough, but this no-knead, 18 hour prove bread is so much easier and tastes genuinely just as good if not better. Last night I threw all the ingredients in a bowl, mixed, covered and put aside for 18 hours. A quick fold, another two hour prove and baked in a Dutch oven for 30 minutes with the lid on, 15 minutes with the lid off. And voila! A delicious, very crusty loaf to have with dinner. I use the famous Jim Lahey recipe from the NYT.

'Caffè Rojano Chicken Strozzapreti ' from the wonderful 'For the Love of Food ' by @paulainsw6rth

I LOVE making this dish, it's become a firm favourite at home! The sauce is just extraordinary, full of sweet and savoury surprises.

Pairs perfectly with my rosemary and seasalt focaccia (thanks @ballymaloecookeryschool !!)

A truly special trip to the extraordinary @dede_at_the_customs_house for @alanpbarry's birthday. Every single bite was heaven and the staff and service were exceptional. @ahmet_dede_ is a genius. taken in Baltimore, Cork by @atasteofaaron

My husband requested an afternoon tea for his birthday lunch (I guess I had to up the ante now that I'm trained!) so I obliged. After a rather extensive two days of baking the menu was as follows:

Slow cooked ham (in cola) and cheddar sandwiches with Ballymaloe relish on white yeast bread

Egg mayonnaise sandwiches on seeded white yeast bread

Wild garlic and cheddar scones (with a mustard cream cheese for me)

Lemon drizzle squares

Rhubarb tartlets made with the gorgeous Ballymaloe cream pastry recipe

Served with softly whipped cream and several pots of Barry's tea

Followed by a white chocolate and raspberry birthday cake. by @atasteofaaron

Winner winner chicken dinner. Brined my chicken overnight, made sage and onion stuffing with sage from the garden. Glazed carrots, silky smooth mash, crispy roast potatoes and a mouthwatering gravy with tarragon and redcurrant jelly. Followed by a request from @alanpbarry, a rather retro pineapple cheesecake decorated with crystallized crabapple flowers (also from the garden). Good food Sunday!

And that's a wrap! What an extraordinary adventure it's been @ballymaloecookeryschool

It's taken me a week to decompress, to try and process everything and to ease my way back into real life. I've spent half the time trying to curate photos that summed up my experience over 12 weeks and really I only need one.

Above and beyond, what made this experience so unforgettable was the group of people that I got to share it with.

I genuinely believe that I've made friends from all over the world who will be with me in some capacity for the rest of my life. Thank you so much for bringing me out of myself, for hugging me when I cried, for dancing with me, for listening to my impressions and for cooking with me and FOR me! ❤️

Thank you to the wonderful chefs who taught me everyday, who shared their wealth of knowledge with me and boosted my confidence with their praise (and educated me with their constructive criticism!). Grazie mille!

@rorysfood is a style icon,a culinary genius and a raconteur like no other. I aspire to one day be as knowledgeable and eloquent (and dapper).

And finally a HUGE thank you to the extraordinary human being that is @rachelallencooks. Rarely have I met a warmer, more caring, inclusive and talented person. You made every single person feel looked after while working like a Trojan. You are a very special person indeed.
