The time has come to spread pizza love 🍕🙌🔥 We’re just over a week out from opening this beauty.

Shannon and I have been talking about opening a pizza restaurant for a few years now, so it’s pretty awesome to see it come to life! 🎉
Also- @omaleens is coming back soon… stronger than ever(indoor bathrooms and lots of AC are just a few of the smaller upgrades, so you can imagine how great the rest will be)😜💪🔥

Lots of flavor coming out of Hico, Texas thanks to the duo of @austin__odom and @chefshannonodom.

I was lucky enough to have to double back through the area recently and was able to make a quick stop at @barbacellis.

While I wanted to eat the whole menu and sample some sandwiches, I showed restraint and went with a pizza and wings.

The pizza is in the Neo style featuring a sourdough crust with beautiful blistering along the edges after a short stint in the wood fired oven. Sausage, hot honey, tomatoes and red onions were a pleasant balance to a tasty pie.

The garlic parm wings are always hard for me to resist, and I’m glad I didn’t. Crispy and loaded with flavor these were some of the best wings in recent memory. They weren’t pretending to have flavor and then lightly dusted… they were overwhelmed with flavor and I was overwhelmed with joy.

It’s amazing to me the quality of food you can get in a town like Hico, but after now having both locations, it’s a must visit to me.

Next time I’m getting the sandwiches.

Do you remember?

A time when your parents took you to the beach?

You were little, and it was your first time tasting that salty air and seeing the ocean… vast and blue, green and white. Waves rolled onto the shore, crashing and sizzling with briny saltwater.

Your dad wore a goofy smile, excited for the day ahead.

Your mom looked beautiful in her bright bathing suit, finally able to relax for a moment as she listened to the ocean and watched you and your siblings build sandcastles, chase waves, and run barefoot through the sand. Happy to see your dad playing so wonderfully with all of you.

You searched for hermit crabs and seashells.

And later, you ate seafood pulled from those same waters only hours before. Fresh, buttery, and unlike anything you’d ever tasted back home.

First time ever catching a fish, why not make it a 43 lb red fish x 3?!

Picture this: a strange kitchen, 3,000 mouths to feed, no sleep… and just the two of us.

The last 3.5 weeks have been WILD.
✨ Six-course dinner for Fort Worth restaurant group @claypigeonfd
✨ Co-hosting a demo dinner with the legend Chef Stephen Pyles @chefpyles @theseekertx
✨ And one of only two Texas restaurants invited to the Atlanta Food & Wine Festival 😱 @atlfoodandwine

Atlanta nearly broke us. We wrapped up our dinner with Chef Pyles at 10 p.m.… drove 2 hours toward the airport… slept maybe 3 hours… then caught a 3 a.m. flight. By the time we landed, it was go-time.

I chopped 100 lbs of onions, 30 lbs of celery, and 30 lbs of carrots… Austin roasted 100 lbs of guajillo + ancho chiles and blended them into a paste for 300 lbs of brisket. Into the ovens they went… until a sous chef pulled them out at midnight thinking they were his for the hotel banquet the following day 😳

By 2 p.m. the next day, almost nothing was ready. Total nightmare. But with a little luck (and a delivery driver turned best friend @xelanow), we pulled it off. By 4:30, everything was rolling.

Running on fumes, we somehow pulled ourselves together, showed up smiling, and served thousands of people like we’d done it a hundred times before. Every other restaurant brought big teams. We had just the two of us. And you know what? We crushed it.

We came home exhausted but so proud… and more convinced than ever that perseverance is the secret sauce. It’s been my word since day one of this journey 8 years ago, and it hasn’t failed us yet. taken in Atlanta, GA by @austin__odom
