Perfect rainy day for a dinner that reminds me of my childhood! 🌧️🌯

Homemade bean burritos with fresh tortillas, homemade refried beans, and a big pot of sopa. Simple comfort food that never gets old!

I completely forgot to take many pictures of the sopa, but managed to get a couple! This recipe is super simple, comes together quickly, and is always a family favorite.

Ingredients:

• A little beef tallow
• ½ yellow onion, diced (whatever onion you have works!)
• 4 cloves fresh garlic, minced
• Tomato paste, a good squeeze
• 1–2 tbsp chicken bouillon
• 16 oz pasta
• 32 oz chicken bone broth
• 1 (8 oz) can tomato sauce

Directions:

Start by heating a little beef tallow in a pot. Add your diced onion and sauté until translucent. You don’t want to get much color on the onion, just soften it up.

Add the garlic, a good squeeze of tomato paste, and the chicken bouillon. Let everything cook together for a minute until nicely incorporated.

Add your pasta and sauté everything together for another minute or two, letting the pasta pick up all those flavors.

Pour in the chicken bone broth and tomato sauce, give everything a good stir, and cook for about 7 minutes, or until the pasta is tender.

That’s it! Super simple homemade sopa with a ton of flavor and hardly any effort.

Paired with fresh beef tallow tortillas and homemade refried beans, this was one of those dinners that takes me right back to being a kid.

Nothing fancy, just good homemade food, a rainy day, and a full house. Doesn’t get much better than that!

Can’t have homemade bean burritos without some fresh, homemade tortillas! 🌯

These came out amazing! Four simple ingredients, made completely from scratch, and honestly so easy to throw together. Definitely a fan favorite with the kids!

Ingredients:

* 4 cups organic Kirkland flour
* 150g Capital Farms beef tallow
* 2 tsp salt
* 1⅓ cups warm water

Directions:

I like to start by heating the water, salt, and beef tallow together in the microwave until the tallow melts and everything is nicely incorporated.

Add that mixture to the flour and mix until a dough forms. Knead it just a few times until everything comes together. No need to overwork it!

Cover with a damp cloth and let it rest on the counter for about 30–45 minutes. Perfect amount of time to finish up those homemade refried beans!

Once rested, divide the dough in 16-18 balls, roll out your tortillas, and throw them on a hot comal. Cook each side until you get those beautiful golden-brown spots.

That’s it! Fresh, soft, homemade tortillas with just four ingredients. No preservatives, no unnecessary additives, just real food.

These turned out fantastic, and the kids absolutely loved them. Nothing beats a homemade bean burrito wrapped in a fresh tortilla!

Quick and easy homemade taco sauce! 🌮🔥

Super simple ingredients, no preservatives, and packed with flavor. Took just a few minutes to throw together and came out amazing!

Ingredients:

* 1 (28 oz) can whole peeled San Marzano tomatoes
* 8 cloves fresh garlic
* 2 tbsp chicken bouillon
* 4–6 chile tepin peppers
* ½ bunch fresh cilantro
* Salt and pepper to taste
* Garlic powder to taste
* Water to thin to desired consistency

Directions:

Throw everything into a blender and blend until smooth. Add a little water until you get that perfect taco sauce consistency.

A quick tip on the heat: I used 4 chile tepin peppers, but these little things can vary drastically in heat! I’d recommend starting with 4, tasting, and adding another 1–2 at a time until you get the spice level you want.

That’s it! Fresh, homemade taco sauce with simple ingredients and no unnecessary additives. Way better than store-bought!

So many of you have messaged me asking how to make homemade vanilla from scratch! 🤎

For every 8 oz of 80-proof vodka, use 6 Grade B vanilla beans.

Split the beans lengthwise, place them in a clean glass bottle or jar, and pour the vodka over them. Keep the beans submerged, seal the jar, and store it in a cool, dark place. Give it a shake now and then.

Let it sit for at least 2 months, but the longer, the better. My most recent batch sat for a full year! 😍

I highly recommend organic vanilla beans and good-quality vodka. With only two ingredients, where they come from matters to me.

Save this recipe for later or start a batch now for homemade gifts! taken in Arizona by @az_expeditions

Last one for the day 🍪🍨

Finishing the night off with a chocolate chip cast iron skillet cookie and Ashlee’s homemade vanilla ice cream.

Cast Iron Chocolate Chip Skillet Cookie

• 1 ½ cups all-purpose flour
• ½ teaspoon baking soda
• ½ teaspoon salt
• 10 tablespoons unsalted butter, melted
• ½ cup brown sugar
• ½ cup granulated sugar
• 1 large egg + 1 egg yolk
• 1 teaspoon vanilla extract
• ¾ cup chocolate chips

Mix the flour, baking soda, and salt together.

In a separate bowl, mix the melted butter with the brown sugar and granulated sugar. Add the egg, egg yolk, and vanilla. Stir in the dry ingredients until just combined, then fold in the chocolate chips.

Press into a greased cast iron skillet and bake until golden around the edges and still soft in the center.

Serve warm with a big scoop of homemade vanilla ice cream on top. 👌

Quick homemade power balls for the kiddos’ snacks this week 💪🏽

Started with fresh homemade peanut butter using 4 cups of peanuts, some honey, and a few pinches of salt. Blended it all up and tossed it in a bowl. It was a little on the dry side since I didn’t add any coconut oil or another base, but since I was smashing everything into balls, it worked perfectly.

Added mini chocolate chips and a bunch of oats, mixed everything together, smashed them into balls, and threw them into meal prep containers.

Simple ingredients, easy to make, and snacks are handled for the week. 🤙🏽 by @az_expeditions

Trying to make enough Bolognese to actually have leftovers for the kids this week 😂 Last time I made 3 pounds of meat and they somehow ate it all, so this time we doubled down.

6 pounds of meat total:
4 lbs Capital Farms beef
2 lbs Italian sausage

Started with 2 onions l one white and one yellow because that’s what I had 6 carrots, almost a whole bunch of celery, and about 12 cloves of garlic. Added a generous amount of concentrated tomato paste, then 4 large cans of whole peeled San Marzano tomatoes, a whole bottle of red wine, and a box of beef bone broth.

Seasoned with plenty of salt, pepper, rosemary, thyme, and sage, then added a couple bay leaves and a Parmesan rind.

Now we let it simmer low and slow for about 4 hours.

Hopefully 6 pounds is finally enough to get some leftovers. 😂🍝

Leo is going to make us scratch pasta so we will post that later! by @az_expeditions
