Homemade roasted tomato soup and sourdough grilled cheese for dinner! 🍅🥣🥪

Leo was head chef for the grilled cheese and made every sandwich himself! 👨🏼‍🍳

I love teaching my kids that so many of the things we buy can be made right at home, from scratch.

And yes, I DO cook. 😂 My husband just posts about it more than I do!

🍅 Homemade Roasted Tomato Soup

Ingredients:

* 3 lbs fresh tomatoes
* ½ onion, diced
* 5 garlic cloves
* 2 tbsp olive oil
* ½ tsp salt
* ¼ tsp pepper
* ¼ cup fresh basil
* 2 tbsp butter
* 2 tbsp flour
* 1 tbsp sugar
* 4 cups vegetable broth
* ¼–½ cup heavy cream (optional)

Instructions:

1. Preheat oven to 450°F.
2. Toss chopped tomatoes, onion, and garlic with olive oil, salt, and pepper.
3. Roast on a baking sheet for 30 minutes, stirring halfway through. Broil for the last 2–3 minutes.
4. Blend roasted vegetables with fresh basil until smooth.
5. Melt butter in a pot, whisk in flour, and cook for 30–60 seconds.
6. Add broth and sugar, whisking until smooth.
7. Stir in blended tomatoes and optional heavy cream.
8. Simmer for 15 minutes, season to taste, and enjoy!

Served with Leo’s homemade sourdough grilled cheese. 🧡

Simple ingredients, homemade meals, and memories in the kitchen.

Lilly requested chocolate chip banana muffins… because of course she did. 🍌🍫🧁

Normally, Daddy steps in and is happy to handle the baking requests around here, but today I decided to remind everyone that I, too, know how to operate an oven. 😂👩🏼‍🍳

And yes, this post serves as photographic evidence that Daddy is NOT the only one in this house who can cook and bake.

Lilly was my little sous chef, and honestly, we crushed it. 💁🏼‍♀️🤎

🍌 Homemade Chocolate Chip Banana Muffins

Ingredients:

• 3 ripe bananas, mashed
• ⅓ cup melted butter
• ¾ cup brown sugar
• 1 egg
• 1 tsp vanilla extract
• 1½ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp cinnamon
• ½ tsp salt
• ¾ cup chocolate chips (or measure with your heart 😉)

Instructions:

1. Preheat oven to 350°F.
2. Mash bananas in a large bowl.
3. Mix in melted butter, brown sugar, egg, and vanilla.
4. Add flour, baking soda, cinnamon, and salt. Stir until just combined.
5. Fold in chocolate chips.
6. Divide batter into a lined 12-cup muffin tin.
7. Bake for 18–22 minutes, or until a toothpick comes out clean (minus the melted chocolate!).

Enjoy! 🤎

And to my husband… thank you for all you do. 😘

So many of you have messaged me asking how to make homemade vanilla from scratch! 🤎

For every 8 oz of 80-proof vodka, use 6 Grade B vanilla beans.

Split the beans lengthwise, place them in a clean glass bottle or jar, and pour the vodka over them. Keep the beans submerged, seal the jar, and store it in a cool, dark place. Give it a shake now and then.

Let it sit for at least 2 months, but the longer, the better. My most recent batch sat for a full year! 😍

I highly recommend organic vanilla beans and good-quality vodka. With only two ingredients, where they come from matters to me.

Save this recipe for later or start a batch now for homemade gifts!

Leo made homemade Alfredo completely from scratch… by himself. 🤯❤️

He’s only 10 years old, and I didn’t help at all. Watching him learn how to cook with real, clean ingredients is one of those parenting moments that makes my heart so full.

I’m a firm believer that teaching our kids how to fuel their bodies is one of the greatest gifts we can give them. These life skills will serve them far beyond the kitchen.

So incredibly proud of you, buddy. 👏🩵

He also picked the song 🤣

To the love of my life…

Happy 38th Birthday. 🤍

We’ve been together for 17 years, married for 13, and for the last 11 years, we’ve had the incredible privilege of raising the three greatest blessings of our lives together.

Watching you become a father has been the greatest privilege of my life.

You are our protector. The one who makes us feel safe no matter what. You’re the first to say yes to an adventure, the most fun during family dance parties, the biggest kid when you’re playing with our children, and somehow, also the softest heart in the room. The world sees your strength, but we get to see the gentle, goofy, teddy bear behind it all.

Thank you for choosing us every single day. For working so hard so we can build this beautiful life together. For pushing us to keep going and do anything we want in this life. For carrying the weight of our family without ever asking for recognition. For making our children feel so deeply loved. For loving me through every season of life.

The older we get, the more I realize that love isn’t found in the grand moments. It’s in the ordinary ones. The making of scratch meals. The road trips. The quiet nights just being together. The way our kids run to you for all the fun things because you’re the fun one. 😉 Those are the moments that become a lifetime.

If I had to choose again, in every lifetime, it would always be you.

Thank you for being my safe place, my greatest adventure, my best friend, and the heart of our family.

Happy 38th Birthday to the man who makes all of our favorite memories possible. We love you more than words could ever express, and we are so incredibly grateful that we get to call you ours.

Here’s to growing older together, chasing more dreams, making more memories, and loving each other even more than we did yesterday.

We love you infinity! 🤍
