really starting to enjoy working with buttercream more now, i think i’ve locked in the recipe and ratios needed. my cakes mostly have extra piping and buttercream sets nicely, keeping all the details <3 by @bakesbyploy

10” 2 layer vanilla heart cake with coconut whipped and buttercream frosting, filled with white chocolate coconut ganache :) definitely a challenge,, coconut cream as it turns out, isn’t suitable for piping but we made it work with a bit of butter !! 🧈✨ happy the bunnies got a chance to shine <3 by @bakesbyploy

happy midautumn festival !! ❤️🎐 an evening spent learning patience and showing up through effort. i tried replicating cantonese style mooncake with a ‘salted egg yolk’ made from butternut squash, wrapped in purple yam and seeds, in a baked pastry dough.

using all purpose flour was actually fine, just need to cut back a bit and also add slightly more oil and golden syrup than the recipe intended. it’s hard work in the kitchen for almost 6 hours after my 9-5, but vegan / eggless mooncakes are rare, if they even exist in dublin. and so i have the task of making them, especially those with dietary requirements!

i may invest in larger, round mooncake moulds so that they can resemble the moon as we all admire her :) now i smell like golden syrup <3 by @bakesbyploy

home cafe chapter 2! a week of buying ingredients / finalising recipes and menu testing, another week of baking and decorating baker goods, a weekend of coffee, matcha, and a space to cosy up in the corner or chat up a new face!

all the proceeds have gone into savings, my lovely helpers paid in unlimited goodies. i’m still recovering from all the overwhelming support i’ve experienced in preparing for this. to build a village is to build a strong foundation. how honoured i am to provide this space for those connections to grow and develop deeper.

thank you doesn’t do justice, i must take a rest now but i hope to come back with an even better cafe experience hopefully soon :) my heart is so full, i couldn’t have done it without my beautiful family and friends. i love you all dearly.

cake commission !! 7” red velvet birthday cake with cream cheese frosting — buttercreams always challenge me since there’s so much temperature control and water content to absorb and when the recipe says ingredients must be room temp, don’t ignore it!! it’s always a pleasure seeing people’s faces light up and enjoying what i’ve created :) she’s not perfect but she’s got character 🤍 by @bakesbyploy

a gift for auntie: 2 layer 8” matcha cake layers, matcha whipped cream frosting and matcha ganache filling. i think with the more cakes i create, the more i realise the reason why these celebrations are so special.

this auntie has never celebrated her own birthday since moving to this country over 2 decades ago. today, we surprised her not with abundance of gifts, but with a simple gesture, one that will hopefully stay with her forever. by @bakesbyploy
