no bake lemon cheesecake commission 🍋🌱🤍

this was a real labour of love - the biscuit base and cheese base were both quite straightforward, but the whipped cream took a lot of patience and trial and error until it got to the right consistency for piping! also i picked the mint leaves from my balcony! i hope the customer enjoys it just as much as i loved making it ☺️

chocolate cake with chocolate ganache frosting 🤍🤎

this took 3 days to make and decorate! a day to bake the layers, everything chill in the fridge for a day, and today everything was ready for frosting. i usually make whipped cream frosting because buttercream is too sweet for my liking - but i tried ganache frosting this time - it was surprisingly easy to make and easy to handle too.

its such a heavy and tall cake i had to put the box lid on stilts using straws but everything worked out in the end, ready for dispatch ! i wish the client a very happy birthday and hope they enjoy it !! i wonder what the decadent chocolate layers taste like paired with the ganache … i guess i’ll have to make more and see for myself 😆

another practice cake!! 3 layer 8” matcha cake + matcha whipped cream frosting with chocolate details 🤍 not following a recipe for the cream was a good thing this time - it came out so smooth and easy to handle! although i was going for a more vibrant matcha green this pale green also works great. also my piping is slowly but surely improving, i just need a bit more rhythm!

since this cake is for some elder asian relatives, i had to reduce a sugar a lot to cater to their not-too-sweet preference :) i think the grassiness of the matcha might overpower that sweetness either way but we’ll see if they like it <3

commission! 2 layer 8inch matcha cake with strawberry whipped cream frosting🤍🍓this was such an enjoyable experience to make! first time making strawberry cream using strawberry purée made from fresh strawberries!

i get quite the creative freedom with these birthday cakes which is always a good opportunity to practice piping! i tried maximising the space as much as possible, doubling up on the borders and drop lines.

the matcha layers inside balance so nicely with the sweet and tart cream, for once i’m so tempted to ask the client to save me some haha - anyways this was actually an easy enough bake and took only 2 days! my hands smell like strawberries now, and to many more <3

commission 8” 2 layer (cut in half) gender reveal cake ! so much fun with this one, fresh strawberry cake layers with whipped cream frosting - another one with total creative freedom, i got some new piping tips and experimented with different borders and drop lines! i shaved the tops of the layers and made a mini cake (that’s atrocious looking) to taste :) i hope the happy couple enjoy the cake cutting and congratulations to them on their baby girl 🤍
