Nutella Stuffed Fluffy Pancakes 🥞🤎🍫

Ingredients

* 190 g all-purpose flour
* 2 tsp baking soda
* 40 g granulated sugar
* 1/2 tsp of salt
* 1 tsp vanilla
* 2 eggs
* 160 g Greek yogurt
* 90-100 ml buttermilk
* 30 g unsalted butter, melted
* Nutella for filling

Instructions

1. In a large bowl, mix together the flour, baking powder, baking soda, sugar and salt.
2. In a separate bowl, whisk together the eggs, Greek yogurt, milk and melted butter until smooth. Make sure the butter has cooled slightly before adding it.
3. Pour the wet ingredients into the dry ingredients and mix for about 20 seconds, just until combined. Don’t overmix.
4. Heat a non-stick pan over low–medium heat.
5. Add 1 tablespoon of batter to the pan for each pancake.
6. Place 1 teaspoon of Nutella in the centre of each pancake.
7. Cover the Nutella with another ½ tablespoon of batter, making sure it is completely covered.
8. Cover the pan with a lid and cook for about 2 minutes.
9. Carefully flip the pancakes, cover again and cook for another 2 minutes, or until golden and cooked through.
10. Serve warm with powdered sugar, fresh berries or extra Nutella 🤎

Tips for fluffy pancakes

* Don’t overmix the batter; a few small lumps are fine.
* Keep the heat on low–medium so the pancakes cook through without burning.
* Make sure the Nutella is completely sealed inside the batter to prevent it from leaking out and burning.
* Cook in batches if needed, without overcrowding the pan.

Enjoy your fluffy, buttery pancakes with a gooey Nutella centre! 🥞🤎 #baking #bakingrecipe #nutella #pancakes #recipes by @bakeswithmarlene
