🥔 Creamy Potato Gratin

Thinly sliced potatoes baked in a rich, garlicky cream sauce until tender, golden, and beautifully crisp on top. 🤍

Ingredients

* 4–5 medium potatoes, thinly sliced (about ⅛-inch)
* 1 cup heavy cream
* ½ cup milk
* 2–3 garlic cloves, minced
* 2 tbsp butter
* ½ tsp salt, plus more to taste
* ¼ tsp black pepper
* Pinch of nutmeg, optional
* 1 tsp fresh thyme leaves, or ½ tsp dried thyme
* ½–¾ cup grated Gruyère or Parmesan, optional

Instructions

1. Preheat oven to 350°F (180°C). Grease a baking dish with a little butter.
2. Make the cream mixture: In a small saucepan, combine the heavy cream, milk, butter, garlic, salt, pepper, nutmeg, and thyme. Warm over medium-low heat until hot and just beginning to simmer. Don’t boil.
3. Layer the potatoes: Arrange the thinly sliced potatoes in the baking dish, slightly overlapping each slice. If you want that pretty “petal” look, fan them out in rows or circles.
4. Add the cream: Pour the warm cream mixture evenly over the potatoes, making sure it gets between the slices.
5. Add cheese: Sprinkle Gruyère or Parmesan over the top, or between the layers if you want it extra cheesy.
6. Bake: Cover loosely with foil and bake for 40 minutes. Remove the foil and continue baking for 15–20 minutes, until the potatoes are tender and the top is golden and bubbly.
7. Rest: Let it rest for 10 minutes before serving. Garnish with a little fresh thyme and black pepper.

* 2 tbsp dried oregano + 2 tablespoons dry parsley 
* 1 tbsp red pepper flakes
* 1 tbsp sumac
*. 1/4 cup freshly grated Parmesan cheese
* 1-2 tbsp lemon juice 
* Sea salt, to taste

Instructions:
1. In a bowl, add olive oil, balsamic glaze, garlic, oregano, red pepper flakes, sumac, sea salt, and parsley.
2. Mix until well combined.
3. Add the white beans and gently toss to coat.
4. Serve with crusty bread and enjoy!

Ingredients

For the Salad

* 1 chicken breast
* 1–2 tsp Cajun seasoning
* 1 cup corn
* Salt, to taste
* 1 avocado, diced
* ½ red onion, finely diced
* 2 small cucumbers, diced
* 1 jalapeño, finely chopped
* ¼ cup crumbled feta cheese
* ¼ cup chopped fresh cilantro

Honey Lime Dressing

* 3 tbsp olive oil
* Juice of 1 lime
* 1 tbsp honey
* 1 tsp Dijon mustard (optional, but adds great flavor)
* 1 small garlic clove, minced
* Salt and black pepper, to taste

Instructions

1. Season the chicken breast with Cajun seasoning and roast or air fry until fully cooked. Let it rest for a few minutes, then cut into bite-sized cubes.
2. Heat a skillet over medium-high heat and roast the corn with a pinch of salt until lightly charred.
3. In a small bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, garlic, salt, and pepper until smooth.
4. In a large bowl, combine the roasted chicken, roasted corn, avocado, red onion, cucumbers, jalapeño, feta, and fresh cilantro.

* ½ tsp vanilla extract
* 1 tsp ground cinnamon
* ⅛ tsp salt

👩‍🍳 Instructions:

1. Add the milk, water, oats, cocoa powder, maple syrup, vanilla, cinnamon, and salt to a microwave-safe bowl.
2. Stir well until the cocoa powder is mixed in.

Tender beef, fluffy basmati rice, warm spices, and a little fresh lemon—this is the kind of comforting meal that makes the whole kitchen smell amazing!

The best part? Everything cooks in one pot, making it perfect for an easy weeknight dinner. Add some green chilies and fresh cilantro on top for an extra kick 🌿🌶️

Ingredients

* 1 lb beef, cut into small bite-size pieces
* 2 cups basmati rice, rinsed well
* 1 small white onion, finely chopped
* 3 garlic cloves, finely chopped or minced
* 4 tbsp olive oil
* 2 tsp salt, or to taste
* 1 tsp paprika or red chili powder
 (use paprika for a milder version)
* 1 tsp ground coriander
* 1 tsp garam masala
* 1 tsp cumin seeds
* 1 bay leaf
* ½ cinnamon stick
* 1–2 star anise
* 3½ cups beef broth or water
* 2 thin lemon slices
* Fresh cilantro, for garnish
* Green chilies, optional

Method

1. Rinse the rice under cold water until the water runs mostly clear. Drain and set aside.
2. Heat the olive oil in a pot over medium-high heat. Add the chopped onion and cook for 2–3 minutes, until softened and lightly golden.
3. Add the garlic and cook for about 30 seconds, just until fragrant.
4. Add the beef and cook for 15-17 minutes, stirring occasionally, until the beef is browned on the outside and most of the moisture has cooked off.
5. Add the salt, paprika, coriander, garam masala, cumin seeds, bay leaf, cinnamon stick, and star anise. Stir well and cook for another 1–2 minutes so the spices become fragrant.
6. Add the rinsed rice and gently stir everything together.
7. Pour in 3½ cups beef broth or water. Place the lemon slices on top. Bring to a gentle boil.
8. Cover tightly, reduce the heat to low, and let it cook for about 18–20 minutes, or until the rice is tender and the liquid has been absorbed.
9. Turn off the heat and let it rest, covered, for 5–10 minutes. 
10. Top with fresh cilantro and sliced green chilies. Serve warm with yogurt.

* ¾ cup (180 g) pumpkin purée
* ⅓ cup (80 g) creamy almond butter or your favorite nut butter
* ¼ cup (60 g) maple syrup or honey
* ¼ cup (60 ml) hot water
* 1 tsp instant coffee or espresso powder
* ½ cup chocolate chips, plus extra for topping

Instructions

1. Preheat oven to 350°F (175°C). Line an baking pan with parchment paper.
2. In a small bowl, combine the hot water, coca powder and instant coffee. Stir until completely dissolved.
3. In a mixing bowl, whisk together the pumpkin purée, almond butter, maple syrup, vanilla, and coffee mixture until smooth.
4. Fold in ½ cup chocolate chips.
5. Pour the batter into the prepared pan and spread it evenly. Sprinkle extra chocolate chips on top.
6. Bake for about 18-22 minutes, or until the center is set but still slightly soft.
8. Let cool completely before slicing.

* A little cinnamon 

Method

1. Preheat oven to 350°F and line a 12-cup muffin pan with liners.
2. In a bowl, whisk together the eggs, maple syrup, Greek yogurt, melted coconut oil, and vanilla.
3. In a separate bowl, combine the oat flour, rolled oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
4. Add the dry ingredients to the wet ingredients and gently mix until just combined.
5. Fold in the diced and grated apple. Don’t overmix.
6. Divide the batter evenly between the muffin cups.
7. Top each muffin with the apple cinnamon mixture that we made. 
8. Bake for 20–24 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
9. Let cool for about 10 minutes before serving.

Ingredients

For the Apples

* 2 apples, thinly sliced
* 1 tbsp butter
* 1 tbsp pure maple syrup
* ½ tsp cinnamon
* ½ tsp vanilla extract
* Pinch of salt

For the Dutch Baby

* 3 large eggs
* ¾ cup milk
* ¾ cup all-purpose flour
* 1 tbsp pure maple syrup
* 1 tsp vanilla extract
* ½ tsp cinnamon
* ¼ tsp salt
* 2 tbsp butter

For topping

* Chopped pecans or walnuts
* Maple syrup
* Optional: powdered sugar or Greek yogurt

Method

1. Preheat oven to 425°F.
2. In a 10-inch oven-safe skillet, melt 1 tbsp butter over medium heat. Add the sliced apples, maple syrup, cinnamon, vanilla, and a pinch of salt. Cook for 4–6 minutes, stirring occasionally, until the apples begin to soften and become glossy.
3. Make the batter: Add the eggs, milk, flour, maple syrup, vanilla, cinnamon, and salt to a blender. Blend until completely smooth.
4. Once the apples are ready, spread them evenly across the bottom of the skillet.
5. Pour the Dutch baby batter directly over the warm apples. Do not stir.
6. Transfer the skillet straight to the oven and bake for 18–22 minutes, until the Dutch baby is puffed around the edges and golden brown.
7. Remove from the oven and let it settle for a minute or two. Top with chopped pecans and a generous drizzle of maple syrup.

🧅 Caramelized Onion Beef Quesadillas 🌮

Juicy, flavorful beef, sweet caramelized onions, and melty mozzarella wrapped in a crispy tortilla pocket. These are SO delicious and easy to make!

Ingredients

For the caramelized onions:

* 1 large white onion, thinly sliced
* 1 tbsp olive oil
* 2 tbsp unsalted butter

For the beef filling:

* 1 lb ground beef
* ½ onion chopped 
* 1 tap garlic 🧄paste 
* 1 tomato, finely chopped
* 1 tsp paprika 
* 1 tsp turmeric powder 
* ½ tsp cumin powder
* ½ tsp cumin seeds
* Salt, to taste
* Red chili flakes, to taste
* ¼ cup water, or as needed
* Fresh cilantro, chopped
* Green chilies, chopped

For assembling:

* Tortillas
* Shredded mozzarella cheese
* caramelized onions

Instructions

1. Caramelize the onions:
 Heat olive oil and butter in a pan. Add the sliced onion and cook over medium-low heat, stirring occasionally, until soft, golden, and beautifully caramelized. Remove from the pan and set aside.
2. Cook the beef:
 In the same pan, add the ground beef. Cook until browned and most of the liquid has evaporated.
3. Add garlic paste, onions, chopped tomato and all the spices. Mix well.
4. Add a splash of water and let everything cook together until the beef is juicy, flavorful, and fully cooked. Finish with fresh cilantro and green chilies.
5. Assemble:
 Take a tortilla and add the beef mixture to one half. Sprinkle generously with shredded mozzarella, then add some of the remaining caramelized onions.
6. Fold the tortilla over to create a pocket and place it on a baking sheet.
7. Bake at 375°F for about 15–20 minutes, or until the cheese is melted and the tortillas are golden and slightly crispy.
8. Serve warm with your favorite dipping sauce.

* 1½ cups whole-wheat flour
* ½ cup all-purpose flour
* 1 tsp baking soda
* 1 tsp cinnamon
* ½ tsp pumpkin pie spice
* ¼ tsp salt
* ¾ cup chocolate chips, plus extra for the top

Directions

1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper.
2. In a large bowl, mash the bananas. Whisk in pumpkin, eggs, maple syrup, Greek yogurt, oil, and vanilla until smooth.
3. In another bowl, whisk together the flours, baking soda, cinnamon, pumpkin pie spice, and salt.
4. Gently fold the dry ingredients into the wet ingredients. Do not overmix.
