Mediterranean-Style Pistachio, Fruit & Peanut Butter Oat Parfait - Pistachio Ricotta * 1 cup whole-milk ricotta cheese * 1/2 Tbsp brown sugar * Pinch of flake salt * 1/4 cup finely ground pistachios * A few drops fresh lemon juice or fresh squeezed orange juice Instructions: Stir all ingredients together until smooth. Refrigerate until ready to assemble. Peanut Butter Tahini Overnight Oats * 1/2 cup gluten-free rolled oats * 1/2 cup oat milk * 1 Tbsp chia seeds * 2 Tbsp freshly ground peanut butter * 1 Tbsp tahini * Pinch of flake salt * 3/4 tsp ground cardamom * 1/4 tsp ground cinnamon * 1/4 tsp vanilla extract * 1 Tbsp honey Instructions: Mix all ingredients in a jar or bowl until fully combined. Cover and refrigerate overnight. Fruit Layers * 1 fresh banana, sliced * 2 fresh figs, sliced * 1 blood orange, peeled and segmented Nut Layers * 1/4 cup coarsely chopped pistachios Assembly 1. Add a layer of chopped pistachios to the bottom of the parfait glass. 2. Spoon in a layer of overnight oats. 3. Add a layer of pistachio ricotta. 4. Top with a layer of mixed fruit. 5. Repeat until the glass is full. Finish with: * Finely ground pistachios * Light dusting of powdered sugar * Optional drizzle of honey Pro tip: Let the parfait set in the freezer for 30 minutes before serving.
