Hi, I’m Lacy!

If you’ve been into Bandit over the past few years, there’s a good chance we’ve already met — behind the counter, at Pepper Place, or somewhere in the middle of a busy morning.

I’ve been creating some of your favorite pastries and testing new flavors for almost five years. Bandit has the best team in the kitchen and behind the counter, and I’m looking forward to what’s next for us.

We’re hiring! Openings on our production team don’t come around often, but we’re hiring a full-time production baker!

We’re looking for someone who takes pride in their work, has an eye for detail, thrives in a fast-paced environment, and understands the importance of teamwork, consistency, and hospitality.

At least one year of professional baking experience is preferred. A willingness to learn, a great attitude, and a strong work ethic are essential.

We offer competitive pay and 2 weeks of paid time off annually. Early mornings and weekend availability are required.

Happiest of birthdays to our Assistant Production Manager, Jordan!

As our resident Libra queen, Jordan has an eye for the little details and a knack for making things beautiful. If you’ve gotten a cake from Bandit recently, chances are Jordan added her special touch to it to bring it to life.

If you haven’t met her at the bakery, you’ve definitely seen her at our tent at Pepper Place. Jordan is a steady presence at the market, making sure that everything runs smoothly while also making just about every croissant we sell at the market! She’s a team player, a hard worker, and always brings a lighthearted sense of fun to her work.

Jordan comes from a big, close-knit family, and that love of family is a large part of who she is. Outside of Bandit, you can find her antiquing, tackling her latest DIY project, or enjoying newlywed life with her husband.

We’re so grateful for all that Jordan does, and we’re so fortunate to have her on our team! Happy Birthday, Big Dawg!

Happiest of birthdays to the man behind the bread, Clay!

A former college professor, Clay first joined us part-time for a summer before deciding to trade academia for early mornings, flour-covered clothes, hours of stretch and folds, and a full-time spot on our team.

In the year and a half since, we’ve watched him grow tremendously as a baker. He works hard, takes pride in what he makes, and is willing to jump in wherever needed. Most importantly, he genuinely cares about getting better at his craft, and it shows in every loaf of bread that comes out of the deck.

When he’s not nerding out on sourdough, you can find him spending time with his wife and dogs, keeping up with the latest reality TV drama, or making an exceptionally good steak salad.

We’re so lucky to have Clay and everything he brings to our team. Happy birthday, Clay!

Today we celebrate one of our bakers, Cait! To know Cait is to love her. She’s kind, considerate, funny, the hardest worker, and the best teammate. Cait is the creative mind behind some of your recent favorites, like the carrot cake croissant and the donut! If you visit us at Pepper Place, you’ve gotten to see Cait in action, and if you haven’t, you’ve probably heard her laughter billowing out from the kitchen.

Cait is our resident jack of all trades. Sourdough, cake, donuts, cookies, you name it, she can and has made it. She also keeps the bakery vibes going, so you can always count on 80s skating music, 90s hits, Celine Dion, or a boy band playing when Cait is there. But more than anything, Cait has the biggest heart and brings so much kindness, talent, and joy to our team. We’re so lucky to have her!

These past two months have been a whirlwind! Our pastry case and market tents have emptied faster than ever, so many new and familiar faces have stopped by, and the love and support from this community have been overwhelming.

We’ll be closed this weekend to give our team time to rest, recharge, and spend time with the people they love. We’re so grateful you’ve kept us this busy. It’s a privilege we never take for granted, and we can’t wait to see you next week! by @banditbham

It’s a new chapter for Bandit.

After more than a decade of building this little bakery into what it is today, founder @bykristenhall is passing the torch to co-owner @lacytrip who will lead Bandit as the sole owner. Two women who fiercely love Bandit. ❤️

If you’ve been here for a while, you know Lacy has been a part of the Bandit team for years, shaping everything from what’s coming out of the ovens to how the days unfold. There’s no one better to carry this legacy forward.

To Kristen, thank you for dreaming this up and building something so special. Your hard work and perseverance has created something wonderful for all of us. Best wishes to you at @lafetebham!
