At the Memphis in May BBQ World Championship, I was having a good time and a picture of me was taken while doing booth duty for my co-packer BBQ Spot that was posted as a PSA for traveling home with sauces (checked) and rubs (going to get stopped by TSA). Jen and I are headed to Memphis in May where we will be cooking with the Traeger Grills team and doing 2 demos for Home Depot. Friday is Brisket & Bourbon Bread Pudding from 1-2 and Saturday is Scheiding Steak Method & Sopapilla cheesecake for a delish lunch snack 12-1 pm. Cant wait to see old and new friends, smoke some meat, and promote our Rogue Rubs at the BBQ Spot booth.

Seafood Sunday #33 - #2025. Great news. The best local fishmonger in SA, Groomers Seafood, started carrying my All Purpose Seasoning and Doug's Dust much to Rick's surprise 😎 I have been going there for at least 25 years when we had to go in through the loading dock (before the nice retail area) and would regularly see sushi Chefs there. Still do. The APS Rub won a National 1st place in Seafood and Doug's Dust 7th from BBQ News Magazine a few months ago. Go in and grab a bottle or two along with the freshest fish in San Antonio. I had Tuna Saku Blocks this weekend.

Seafood Sunday #27 - #2025. My BBQ brother Dennis posted this a coupke of days ago. DOUG'S DUST on Ceviche. This is Genius. LOVE THE NOT JUST FOR BBQ which is what I say.. Just tasted it on beef tartar at a local restaurant as a few weeks ago. I thought I was being creative on avocados 🥑 Nice job brother 👊🔥💯

Happy 4th to you and yours. Cooked for about 20 people. Tried Ol' Boy Chad Ward's party ribs for the first time using Head Country Apple Habanero and OG Sauce. I liked them. Not as tender as my comp ribs but enjoyed them. Also did 2 tri-tips, Opa's Sausage, and bavette tacos with Guacamole, pico de gallo, and Julio's Hot sauce.

It is possible to do catering when you are out of town. I cook with TX Brisket Rub, cut with the Bubba, Bag and tag the CAB brisket then super save it with strained brisket au jus. Use a sous vide like Anova or boiling water to reheat... just like new. I feel sonetimes brisket tastes better the second day. Actually also the best way to reheat bbq in my opinion as well.

Do you use a super saver to reheat BBQ? by @bbqspot

Seafood Sunday #24 - #2025. Pan seared Halibut on the Timberline Induction with a simple AIOLI sauce Sometimes keeping it simple is best. Jack Bishop of America's Tear Kitchen. 1 Buy Good Fish. 2 Don't Overcook the Fish. 3 Don't drown the Fish in too much sauce. Pro Tip from Jack - Try putting a light dusting of flour on the fish for extra browning while searing.

Breaking News‼️ Recently found out that our Texas Brisket Rub finished in the Top 10 in the American Royal World Series of Barbecue Rub Contest aka Best Rub on the Planet. Honored and blown away with this achievement. Thanks to Head Country BBQ and Old World Spice for their encouragement along the way. Huge Gratz to Phil Wingo of Smokin Hoggz on Overall Champion.
