Here’s another folded pizza sandwich, because why not! 🍕

This time we tried a reel (first time). This was a classic meatball in pomodoro with basil, rocket, home made basil and pine nut pesto, melted mozzarella, and topped with grated pecorino. All cooked to perfection again in the @gozney roccbox 👌 🔥

Folded pizza Sandwich - Mortadella, pistachio pesto, Burrata, rocket 🇮🇹

Just got back from an incredible trip to Italy, and inspired by our visit to Bologna, we made this sandwich - paired with plenty of Aperol Spritz.

We used our usual 48-hour cold fermented dough (65% hydration), divided into 220g balls, folded and baked to perfection in the @gozney Roccbox. We filled it with mortadella, burrata, rocket, and homemade pistachio pesto.

For the pesto: we de-shelled, blanched, and peeled pistachios to keep them bright green, then blended with pecorino, Parmesan, garlic, lemon juice, basil, and extra virgin olive oil for a creamy finish.

Excited to fire up the Roccbox for more sandwiches soon - a welcome change to the classic pizza 👌

Sunday Breakfast Tacos 🌮 🍳

We made big batch of fresh corn tacos using Maseca masa harina from Amazon. They froze and defrosted really well, so we decided to use them for breakfast tacos today. We cooked some raw chorizo with small cubes of potato, oregano, and a splash of vinegar until everything was crispy and flavorful. Then, we topped the tacos with a salsa made from diced tomatoes, jalapeños, coriander, and lime, along with crumbled feta, fresh coriander, creamy avocado, and a perfectly runny fried egg cooked in the chorizo fat. The fresh corn tortillas made all the difference, giving the tacos a super authentic flavour 👌

Pizzas in the @gozney roccbox 🍕

We upgraded from an electric pizza oven to a gozney roccbox about a year ago, and wow what a difference. Dough balls are around 270g at 64% hydration, cold fermented for around 24hrs. Tonight was salami and nduja. It’s become a weekly thing in our household, currently in the process of trialing lots of crazy toppings. More to come!

Rigatoni Al Ragù 🍝🇮🇹

As we head into these freezing cold months, batch cooking a big ragu for the freezer is great. We usually make a big lasagna to portion and freeze, then the leftover ragu we toss with some rigatoni pasta and finish with Parmesan.

Our ragu is classic, with beef, pork and Italian sausage mixed together, fried with blitzed carrot, celery and onion, garlic, tomato paste, red wine, tinned tomatoes and stock, with thyme and rosemary, simmered for 2-3 hours.

Epic roast at home a few weeks back 🤌

As we head into autumn, Sundays mean roast. Here we did a roast pork loin, home-made cauliflower cheese recipe from @chefthombateman , pork stuffing, roast potatoes, @jamesmartinchef Yorkshire puddings, honey butter carrots and braised savoy cabbage. Gravy we usually jazz up a bisto/knorr combo as it’s undeniably tasty!

Prawn Risotto 🦐

What a delicious tea we had tonight!

Picked up 10 shell-on prawns from @tarbetts for just £6. Removed the heads and shells, then sautéed with tomato paste, shallots, garlic, chilli, and a splash of brandy. After that, simmered everything in water to create a rich, orange prawn stock, which we got from @marcuswareing .

Next we prepared a classic risotto, gradually adding the prawn stock to the rice. Near the end, pan-fried the whole prawns, stirred some of them chopped into the risotto along with finely diced red pepper, parsley, peas, and a squeeze of fresh lemon juice. To finish, we topped each plate with three full prawns.

It was absolutely delicious! Can’t wait to make this dish again for a special occasion or dinner party. 👌

Steak salad (diet food) 🥩🥗

On a bit of a diet currently and thought this steak was too stunning not to get on the grid 😉

Perfectly seared sirloin from @aldiuk on a bed of shredded lettuce, finely diced cucumber, avocado and feta, boiled and roasted baby potatoes and a classic French dressing with the steak’s resting juices added.

No butter basting, so could defo be more exciting/decadent, but went down an absolute treat tonight 👌

Banh Mi 25, Hanoi, Vietnam 🇻🇳

We were in Vietnam earlier in the year and got heavily involved in the food scene there, as we wanted to try all the classic dishes from the best places we could.

After trying a few in various cities, this banh mi was our favourite from Banh Mi 25 in Hanoi. The classic sandwich was phenomenal, with barbecued pork, pâté and picked veg/salad, in an unbelievably light baguette that was like air 💨

We went back to try their other signature dish (pic 1) which was banh mi chao, kind of like a deconstructed hot version of the sandwich filling served in a small pan with a runny fried egg and what tasted like a thick, soy-based meat gravy. This came with the bread and pickles on the side. Delicious 👌

Steaks on the BBQ 🥩🌿🔥☀️

The sun came out a few weeks ago so we went straight to the shop for the essentials; steak, potatoes, salad.

On the @weberuk we cooked a fillet and ribeye from @waitrose to share on high heat. Made a class parsley & oregano-based chimichurri, then our classic potato salad.

Potato salad is made with boiled and cooled Maris piper potatoes, creamy home-made mayo, frenchs mustard, lemon juice, and tonnes of chopped parsley, dill and spring onions.

A delicious Sunday feast in the sun ☀️

Heim Cafe, Lisbon 🇵🇹

The most amazing brunch for sweet and savoury. A must visit if you’re ever in Lisbon that is guaranteed to make your morning. A super chilled out place with some amazing brunch dishes. As a group of four last year, we went for the following:

1. Avo toast with red pepper sauce and eggs
2. Sunny Pancakes, coffee cream, berries, Oreo crumble, ice cream
3. Turkish eggs
4. French toast, berries, crumble, corn syrup
5. Happy eggs, bacon, Parmesan, chilli

Personally, can’t recall having a better brunch anywhere in the world. Bold, but the truth…

Delicious brunch yesterday in South Manchester 🍳

Turkish eggs was the choice for both of us at this lovely little place our friends recommended in West Didsbury, Another Heart to Feed.

It came with spicy merguez sausages, grilled halloumi and the classic fresh sourdough which was great as we always say how this dish needs something else like this with the eggs and garlic yoghurt.

Super tasty brunch outside on a crazy warm morning that set us up for a great day ahead 👌
