Welcome to @appellationrestaurant at @thelouisebarossa.

Start with fresh tuna with daikon, fermented chilli and buttermilk. Continue to cured kingfish with yuzu, apple and cucumber. Later, pear sponge with strawberry sorbet and coulis, with just a hint of local Barossa shiraz.

Executive Chef Sam Cooper and his team work closely with Barossa growers, producers and winemakers to craft a menu that speaks to the season and the valley itself.

The light lengthens, the pace eases and tables everywhere are set a little longer for the people who matter most. At Beckons, our collection is set in some of the world's most remote and remarkable places, where the festive season is all about coming together. Every detail is taken care of, so there is nothing for you to do but be present and enjoy the occasion.

As December rolls into the early days of a new year, each of our lodges marks the season in its own way. Across different landscapes and different traditions, there's one shared spirit: the simple pleasure of being together.

For many of our friends, the extended summer festive season has become a yearly rhythm, a tradition of its own. We're already looking ahead to 2027; it's not too early to reserve your festive season stay now.

A record year for Beckons. All nine Beckons lodges have been recognised in the 2026 Condé Nast Readers' Choice Awards, voted by readers in the US and UK.

Highlights included @silkyoakslodge coming in a stellar 15th place in US Condé Nast Traveler Awards’ Best Resorts in the World list, while Beckons took a clean sweep of the top three places in Condé Nast Traveler's Best Resorts in Australia and the South Pacific list. @silkyoakslodge in the Daintree Rainforest was named number one, ahead of @southernoceanlodge on Kangaroo Island in second and @capellalodge on Lord Howe Island in third.

In the US list, @tierrahotels Patagonia placed third and @tierrahotels Atacama was ninth in South America. @clayoquotwildernesslodge was 10th in Canada, @thelouisebarossa was 10th among the Best Hotels in Australia and New Zealand, and @hukalodge was 18th in Australia and the South Pacific.

In the UK list, Condé Nast Traveller readers named four Beckons lodges among the Best Resorts in Australasia and the South Pacific: @southernoceanlodge (#5), @longitude131 (#7), @hukalodge (#9) and @silkyoakslodge (#10).

Vancouver Island's Bedwell River, running low through summer until the wild salmon turn back towards it.

For the second year running, eight Beckons lodges have been recognized in the MICHELIN Key Hotels list - and this year, @southernoceanlodge has been awarded Three Keys.

Only 155 hotels around the world hold Three Keys, making this an incredibly rare distinction. Southern Ocean Lodge is one of just two new Three-Key properties in Oceania, with @michelinguide inspectors describing it as a shining example of creative modern architecture in a remote and rugged locale, with exceptional opportunities for wildlife and nature experiences.

@clayoquotwildernesslodge and @tierrahotels Patagonia have both retained their Three Keys, while @longitude131, @capellalodge, @silkyoakslodge and @hukalodge have each held their Two Keys. @tierrahotels Atacama has also moved up, from One Key to Two.

That means all eight Beckons lodges recognized in the MICHELIN Keys now hold either Two or Three Keys - representing an exceptional stay that is unique in every way, or the extraordinary kind of experience MICHELIN describes as a destination for the trip of a lifetime.

From September through November, Kangaroo Island trades the wild oceanside winter for new spring life. Yellow wattle and rice flowers color the clifftops, native succulents bloom amongst the coastal heath, and the wild, untouched beaches welcome a calmer sea. @southernoceanlodge sits on the edge of it all, with every suite opening onto views of the vast Southern Ocean as the horizon reaches towards the Antarctic.

Spring appears first to the people who know it best: from our naturalist guides who know which kangaroos are nursing new joeys, to Chef Gianni who picks freshly-grown produce to plan the daily menu and to our spa therapists who know when the lavender starts to flower.

Tierra Patagonia is now open for the 2026 season.

General Manager Esteban Bagnis invites you to discover spring on the edges of the magnificent Torres del Paine National Park. Hiking trails are shared with a fortunate few, and the chances of a puma sighting are at their seasonal best.

Over three nights in early September, the @uchirestaurants kitchens returned to Clayoquot for its popular Japanese-style culinary weekend, The Wild Table.

Days were spent horseback riding, hiking forest trails and joining a hands on sushi making demonstration with seafood caught in the sound that morning. Evenings went to the table: Friday for the Uchi classics - think local oysters, salmon with ponzu; Saturday for a 10-course menu written specially for that weekend - with hama chili yellowtail, scallop crudo with umeboshi and bluefin tuna negitoro - all served family-style.

Thank you to @haihospitality, and to the guests who came to the Sound to enjoy.
