Most of us grew up thinking we were using olive oil.
The truth is, many of us never have.

Real olive oil is a fresh product.
It has a harvest date.
It comes from a specific place.
And when you taste it, your throat should feel a slight peppery kick.

Once you know what to look for,
you stop guessing.

And you never see olive oil the same way again. 🌿

This is how our olive oil is made, from start to finish.

Our harvest begins in early October, when the olives are picked just before they fully ripen. At this stage, they contain higher levels of antioxidants and develop a more complex flavour. All olives are handpicked and kept cool before being taken to the mill the same day to prevent fermentation.

At the mill, the leaves are removed and the olives are washed. We then extract the oil using a traditional stone mill rather than high-speed industrial machinery. This slower process allows the olives to be pressed gently and helps preserve the quality of the oil.

The olives are crushed into a paste, spread onto disks, and pressed again. The solids are separated, leaving raw, unfiltered olive oil. Each batch is tested to ensure it meets extra virgin standards.

The oil is then flown to Singapore. Bottling closer to the end consumer helps preserve the oil’s integrity and avoids damage from long periods of transport.

This is our process, and it’s how we approach every batch we produce. 🤍

This is the story of how a Singaporean Chinese woman, and a Southern Lebanese man decided to embark on a journey of preserving the way extra-virgin olive oil is produced in the Levante. Their story is one of a magical mix of culture, and a lesson that love conquers all. Welcome to the family 💚 #evoo #oliveoil #singapore #singaporefood #organic taken in Singapore by @beitballout

At Beît Ballout, we are a home for important stories.

From the very beginning, we promised to take you beyond the bottle of olive oil you hold in your hands. To share our methods, preserve our heritage and traditions, but above all, tell the stories of the people who make this journey possible.

Today, we want to tell you about Abu Ali, our groundskeeper.

Some of you may already know that our Levantine Lavender soap was created in memory of his late wife, Um Ali, who was killed during the war last year.

She would often accompany him through the valleys of southern Lebanon, collecting wild lavender together. Abu Ali is a quiet man, but she had a way of bringing him out of his shell, filling his days with laughter and warmth. Her absence has left a hollow that words cannot quite describe.

Today, I wanted to give Abu Ali a platform to share his thoughts with you. Because not everyone has an audience, but everyone has a story worth hearing.

What moves us most is that despite everything he has lost, he continues to wish for peace, for people to return to their homes, and for his country to rebuild.

There is something profoundly beautiful about a man who has every reason to be angry, yet continues to wish for peace.

This is Abu Ali’s story, and we are honoured to share a little piece of his world with you. 🤍 by @beitballout

After the first rain, we wait a few days, then the picking begins. 🫒

If you don’t know already, at Beît Ballout, every single olive is hand-picked.

There are a few reasons for this.

First, it allows us to give work to people who need it, including people who have come to Lebanon seeking a better life, often from places like Palestine and Syria.

Second, it allows us to be incredibly careful with both the fruit and the trees themselves. We don’t use harvesting machinery. It would certainly make the process faster and easier, but we believe some methods can unnecessarily damage the tree and fruit.

So we choose the slower way.

Once picked, our olives are taken to the mill that same day, usually within 4–6 hours. Olives are fruit, and from the moment they leave the tree, time matters. Leaving harvested olives sitting for too long can encourage fermentation and deterioration, affecting the quality of the oil we eventually produce.

Then, they’re milled.

And from there, our olive oil goes straight into tins, ready to eventually make its way from our home to yours.

It really can be that simple: olives, carefully picked, quickly milled, properly stored.

But somewhere along the way, olive oil became something most of us know only as a bottle on a supermarket shelf. We rarely know who picked the fruit, where the trees grew, how the olives were handled, or what happened between tree and bottle.

At Beît Ballout, we want to change that.

We want to show you the process, the people and the places behind the food you bring into your home.

So, welcome to harvest. 🌿 by @beitballout

Beît means home in Arabic.
Ballout means oak.

Together, Beît Ballout means House of Oak.

And perhaps there was no better name for the world we wanted to build.

Like the oak tree, Beît Ballout is rooted. Rooted in culture, in stories, in craft, in food, and in the moments shared around a table.

It began with a home built by two people from opposite sides of the world: Mae, a Chinese woman from Singapore, and Adib, a Lebanese man from the South of Lebanon.

Two cultures, two very different backgrounds, brought together by love, family, and a shared belief that food is one of the most beautiful ways we can understand one another.

That home became the foundation for ours.
Today, Beît Ballout is a home for food, craft and stories from around the world, but especially those that come from our own.

Everything we bring into Beît Ballout carries a little piece of somewhere, and someone, with it. So when we say welcome to Beît Ballout, what we really mean is:

Welcome home. by @beitballout

These guys are to thank for our fertile soil 🌲 They eat all the fallen olives, and in turn we use their excrement to plant more olive trees. Which means nothing goes to waste and we can do our best to remain sustainable🤍 taken in South Of Lebanon by @beitballout

“Beît” in Arabic means “House” and “Ballout” is our family name! “Beît Ballout” is also the name of the house where the Ballout’s spend their summer together as a family, and also where their olive farm is situated. Waking up in the morning, one can venture down into the olive groves and pick fresh olives when the October season comes, as well as other fresh and organic fruits and vegetables which grow all year long 💚 if you’re lucky, you might even be able to pet some sheep on the way 🐑🐏 #organic #oliveoil #olivetree #olivegarden #singapore #lebanon taken in Lebanon by @beitballout
