This dinner was incroyable. The wine list is insane!! You'll definitely want to talk to a somm unless you plan to get lost in the table of contents. There's absolutely something for everyone in terms of price, region, & style. I started with a dry sparkling Tokaj because I was intrigued. After, one of the somms, Daniel, took control and cultivated us a beautiful pairing with our meal. We got to try so many different wines and learned so much. Going out to eat is not about the food or beverage itself, it's really about the experience (for me at least) & Chambers nailed it as always. Food is absolutely phenomenal as well. Most people automatically think of Tokaj when they think of Hungarian wines, but this week I was surprised to taste some pretty outstanding examples around Lake Balaton. While the shores of the lake boast a large variety of soil types, the best examples are grown on volcanic basalt soil, the result of now extinct volcanoes that erupted MILLIONS of years ago. HOW COOL IS THAT!! These soils add a subtle smoky minerality which adds a layer of complexity and really completes the wines.

Tihan is in the Northern peninsula of the lake and is such a beautiful land of lavender. Something I personally find so interesting about wine is how much of an effect surrounding environmental factors have on the grapes. We got a bottle of lavender Rosé from Echo, a restaurant at the top of the hill, and the lavender flavor was very prominent. The grape is called Bluefränkisch, and the winemaker actually throws in some lavender flowers during fermentation. This wine was certainly a porch crusher, giving notes of very bright, fresh red fruit and crushed purple flowers with a very slight effervescence.

Another widely planted grape around Balaton is Irsai Olivér. These wines are also very crushable, enjoyed while they're still young and vibrant and give flavors of lemon, green apple, and white flowers with a pleasant savory herbal finish. This wine is also slightly effervescent. The reason so many wines coming out of Balaton have this slight sparkle is because most winemakers have shifted into a more natural winemaking style with minimal intervention.

If you ever find yourself in the area, make sure you take some time to try these local gems!!!
