WBrC Reflection PT. 3 — There was too little time. Too many changes. And too many challenges that we had to solve in less than 3 days. Roasting the coffee in the environment of Brussels, during the hottest week Brussels has ever seen since the 90s, was a challenge. Either way, the coffee was not performing, and it wasn’t opening up. Based on our tests in KL and Manila, normally our coffee would peak around 24 hours. But here, the coffee remained muted. We didn’t have any more time to see how it would perform with more rest. But we did everything we could till the last minute before cart to stage. The other thing was I essentially had 9 coffees to grind, at different grind sizes and different RPM. And under the pressure, I screwed up. I had ground one of the coffees wrong unknowingly, and my second dripper actually had a different ratio of coffee inside. This led to a much longer TBT, destroying my chance at consistency and flavour accuracy.There’s no one to blame, really. There’s a strange feeling of disappointment, acceptance, and just existing in that moment knowing there everything you prepared for could melt away in an instant.I’m reminded of the same words that found me, just before the competition.Journey, before destination. We didn’t end up where we hoped. But this whole journey was so meaningful, so incredible—that I can’t just write it off because we didn’t end up at our supposed destination.Of course, I still feel down. But somehow, I have a little hope. I saw the person I was under the crucible of pressure. I saw how close I got. I saw who I became, from April Brewers Cup to WBrC this year.And just like in any journey, it’s okay to feel down, but what matters is the next step. by @bene.sanchez

WBRC Reflections Pt. 2 — The concept gradually evolved, ultimately taking shape three days before the competition.When it came to the words, I finally found them on June 22 at 9:36pm.After my last run that day, the feedback I received: “Everything in the middle is okay, but I have no idea how it’s connected to your concept”My original concept was “What you water grows” (which was already the fifth version so far), which to be fair, took a few leaps to connect why it was about flowrate.Even if I was going on stage in less than 72 hours, I decided to take a risk. I didn’t come to Brussels just to be “okay” so I scrapped the routine I had been practicing for about two weeks now, and rewrote a whole new one. My favourite author is Brandon Sanderson, and he wrote this epic fantasy series called Stormlight. In the book, there is a saying, “Journey, before destination.”It’s coincidental that in the series, the characters have to find “the words” before they could ascend to the next rank or stage. I found the words that captured everything I had been going through the past three years.Journey before destination. Some parts of the journey are slow. The months spent training, practicing my pouring, feeling lost with what I wanted to present. Other parts are fast, like the last 72 hours where we changed almost everything from the brewing method, the coffee, and the script. These things shaped the result, and while it was not what we were hoping for, I’m ironically reminded that the journey getting there is just important as the destination. Competition shows you what you are made of. In the end, I found it easier to change the words, but changing the motions was difficult. WBRC REFLECTIONS PT. 1 — Not sure where to start but I’m going to attempt anyway.I’m extremely grateful to have been able to represent the Philippines on the world stage.A roller coaster of emotions, happy, sad, excited, disappointed, frustrated, but hopeful. There was so much learning about coffee and about myself that can’t fit in one post. It’s been a three year journey getting here. My first nationals I got 2nd place. We didn’t hold nationals for a year, then last year, I won, and started preparing for WBrC. The person I was then is definitely not the same as now. A huge part of that was thanks to my coaches. Thank you Lengleng, Jimmy, and Sherry for going on this journey with me. We live in three different countries but we found a way to create something special together. Countless messages, videocalls, two trips to KL, one to Taiwan, and then finally flying to Brussels. Different cultures, different personalities, and different things everyone brought to the team. Thank you for helping transform this homebrewer, to a “professional homebrewer.” 😆 Thank you for your tireless efforts, suffering with me in the AirBNB with no AC, staying up late and waking up early, and preparing everything up to the very last second. You guys stuck with me all the way to the end, and for that I am so grateful.The second part is my family. Thank you to my wife who held me, supported me, and came all the way to Brussels even being 5 months pregnant. Thank you to my parents and my brother who also went along, and helped do all the errands in the city, the washing, and watching my routine to the nth time. And I want to thank Zee. You trusted me with your coffee, the last of it in the entire world. Two lines can’t capture the journey these cherries underwent. Growing deep in the forest, 1900 MASL, under dense canopy and surrounded by dense mulch. The area where only you know because of the tribe’s trust. Right where the mother tree lives, over a hundred years old. Waiting for the cherries to turn dark red, and then bringing them down the mountain to process carefully in your studio. It all started two years ago when I first met Bene at his national competition. Then last year, he asked @jimmyl_zb and me to step in as his roaster and coach.To be honest, the past 14 months have been an insanely fast rollercoaster. We traveled back and forth to keep training and pushing till the day of WBrC. Together with Sherry escalating the training process, the experience felt interstellar—like we were searching for clarity in the universe. Co-coaching with @shihyuanhsu was truly eye-opening and inspiring. And of course, jimmy’s dedication towards roasting has my utmost respect too. The concepts, from ‘flavour transition’ to ‘speed of brewing,’ were the very ideas that brought everything together; the flow rate has a significant outcome in segmenting the extraction. A slower flow rate allows the bed sufficient contact time to dissolve the deeper soluble compounds, whereas a faster flow rate moves swiftly to highlight and isolate the highly volatile, desirable aromatic compounds. Therefore, as a home brewer, you can always play around with slow / fast by stages.Personally, I have to admit, staying behind in KL to watch Bene on the livestream was tough, because physical presence matters so much to me. But Sherry and Jimmy poured so much of themselves into making sure the coffee tasted incredible and the routine went right.Thank you @bene.sanchez for seeing me as your mentor, your friend, and your family—your kindness is equally precious. I hope this is just the beginning of a new journey. Take your time to wind down now, and enjoy some slow, slow, slow days ahead. WHAT DOES BEING A CHAMPION MEANIn a few days, I’ll be an “expired” champ, as the Nationals are currently underway for the next Brewers’ Cup Champ. It’s been a year since I won, and I’ve had a lot of the time to reflect. 1. Winning is just the beginning. Winning Nationals was the start of a long arduous journey preparing for world’s. Just because you won doesn’t mean you know everything, it’s just the door into something deeper. There’s always more to coffee, and it’s not just about the coffee.2. Being a champ is not always about winning. Some people might disagree. But to me a champion is somebody who “champions” something. You represent something that is bigger than yourself. Something you believe in so much that you put in the time and effort to show the world why this matters.3. Titles don’t mean much in the end. Yes, you may have won, you may be the most skilled, most advanced, most knowledgeable, but if it’s only for yourself, it doesn’t mean much. Coffee is more than just a game, coffee touches people’s lives. I tried my best to share what I know to anyone interested—but sometimes it was simply being a PART of the coffee community, drinking coffee together, laughing, sharing, and dreaming.4. Anyone can be a champion, but few are willing to do what it takes. Well, the journey is not entirely over, it’s two weeks till Brussels. Of course there is always the question of whether what we’re bringing is enough, etc etc. But looking back, I know that my 80% today is so much more than my 100% before I began this journey. I’m reminded that I’m just at the beginning.🌱 by @bene.sanchez

Was in KL for a couple days, and I just realised I’ve been to KL five times these past years 😆 The coffee scene is inspiring, the people are warm, and the food is amazing! It does require to go a little out of the way to find the “gems” but that’s what makes it more fun 😎 by @bene.sanchez
