I was having lunch with friends at a famous tonkatsu restaurant when @jwang815 casually suggested we visit a coffee shop nearby. He said it had been around for ages and was supposed to be extraordinary. I was planning to leave early to get back to Tokyo early evening via Omihachiman, an old merchant town from the Edo period. But curiosity proved stronger than common sense, as always and I found myself in the back of a cab with the others.

The coffee shop was tucked away on a remarkably quiet street in Yao. Inside, two customers were patiently waiting for their coffee to be brewed. We ordered ours and joined the ritual! It became quite obvious very soon that at The Münch, coffee is not something you make in a hurry. Some preparations take hours. Wonderful news for someone who was already running late.

Along with the slow brewed coffee, we also tried a spoonful of coffee that had supposedly spent 28 years ageing in a barrel. Was it the most expensive coffee I haf ever tasted? Absolutely. It tasted like an aged Sauternes. Still it is a “been there done that” type of thing.

The real pleasure of the visit was the peculiar sensation of time travel. And the irony of discovering such a place on the one day I had no time to spare… taken in Yao, Osaka by @besim_hatinoglu

Sanki çok tecrübeliymişim gibi iki hafta önce İspanya’daki şarap üreticisi arkadaşa yardıma gittim. Gerek hasat gerekse de şarap yapımındaki zorlukları anlatmaya gerek yok. Tüm günün yorgunluğunu unutturan şey ise öğle ve akşam yemekleri. Ben de yanımda götürdüğüm malzemelerle Çayeli usulü kuru fasulye yaptım. İspanya’daki yerli ırklardan birinin kaburgasını kullandım et için. [hikaye mode on] Domates sosu Napoli’ye yakın volkanik dağ eteklerinde yetiştirilen domateslerden. Fasulye, Umbria’dan organik tarım cannellini [hikaye mode off]. Hafif çektirmek için şarap olarak Podere Le Boncie’nin Le Trame 2019’u kullandım. Yanında Les Horées, Pommard La Rue au Port 2022 açtık. Afiyetle yenildi.
