#WhistlerWednesday
With such a historic whistling duck season opener, we wanted to share one of our favorite ways to prepare these birds: Sous Vide Whistler Breasts & Legs.

This recipe is simple, forgiving, and packed with flavor.

-Start with a large portion of butter. It should be enough to fully immerse the amount of whistler you’re cooking.
-Add fresh rosemary, thyme & garlic.
-Add a healthy amount of Worcestershire.
-Season with onion powder, garlic powder, and your choice of salt & pepper or Cajun seasoning. We went with Cajun.
-Optional: Add a little roasted beef Better Than Bouillon and/or balsamic reduction for even more depth.

Melt everything together, then add your cleaned & prepped whistlers to a vacuum-sealed bag with the butter mixture.

Sous vide at 125° F for a minimum of 3 hours. We usually let ours go all day.

Once they’re done, pull the whistlers from the bag and give them a hard sear in a cast iron skillet to get some color. Slice, serve, and enjoy.

We’ve previously turned the cooking liquid into a gravy to pour over the top. This time, we went with a fresh homemade chimichurri.
