Two weeks of LC!! It’s moving so fast already I am lost for words. This last two weeks I’ve had many mess ups and many more lessons from some incredible people. I am so excited for the next month and a half of growth. I think for the first time I’ve become incredibly aware of the way I work and not just the outcome, and recognize that I need to learn to slow my brain down to speed my work up. Anyways, here’s to never having another dried tomatoes on the fly or near death experiences… hopefully? taken in La Colombe Restaurant by @bliksemskitchen

My exam in summary: made some things, got told they tasted like throw up, cried for like half a minute, celebrated with a Bev and the beach. WHOOP WHOOP FINAL STRETCH!!!! - fermented mushroom and mustard buckwheat tarts (chef paddy took this photo this man has MASSIVE dad status in my heart) - black sesame babka (if u want to know what a dry store tastes like, i have the recipe for this bread which is apparently about as close as it gets 🤣) with cultured allium butter - Cape Salmon ceviche, lemon pressed cucumber ribbons and pickled carrot with kombu broth and a lemongrass dill oil - the slangetjies that also went with it tehehehe I genuinely forgot them completely then saw my plate hasn’t been sent yet - naartjie sorbet palate cleanser w/ guava crisp (eeeyyyyeee Pddy lso took this one) - the flowers that I got delivered to my house at midnight the night before my mise en place (thank you so much I love you tehehehehe eeeee) -roast corn ice cream with a cornflake shell, toasted savarin (I had time to save those cakes and didn’t cause I was trying to fix my jellies that ended up melting on my plate anyways???? So shout out to those cause this afternoon I found a tray of jelly that I’d left in my car in the blistering heat and it was set solid so tell me how the heck that happens) oh and also toasted meringue, dark chocolate crumb and whiskey compressed apples (leave me alone Glen IM SORRY) - knife that got me through my exam cause mine is blunt as an actual rock - almost fell asleep here, legendary end to this sh*t show of a month My mains not included cause it looked like it came out my bum so I didn’t take a pic, sorry not sorry taken in Silwood School of Cookery by @bliksemskitchen

This post goes out to my 2016 self. Please don’t be alarmed by the Rio De Janeiro filter! Belting Taylor Swift’s 22 had me chasing whatever the feeling of that filter is, and honestly - I achieved it this weekend in every way shape and form. Welcome to my twenty-second birthday weekend except it’s (mostly) all about the food!!! Started Friday night strong with a Braz Blow-out, two delicious cocktails and a melange of yummy sarmies from @aperitifonbree Post sarmie ice-cream from @thecreamerysa !! We didn’t tell them which sprinkles had to go on which I/C so I got Auryn’s sprinkles which I likes WAY more than I would’ve liked my 100’s and 1000’s. Whoopsie🤭🤭🤭 I got the strawberry cheesecake which was TO DIE FOR and the honeycomb because I physically cannot enter a creamery and not walk out with a scoop of honeycomb. Auryn had the choc chip cause classic and then a scoop of their carrot cake flavor which also just banged beyond banger Ruby and I went to @salsify_at_the_roundhouse which means I got to watch @_sliced_and_diced_ explain our first snack to us! I love love love this lady and she was so well spoken I am #lostforwords I just thought these menu’s were cute. Also we got a complimentary glass of champs each which was just a really special way to start our meal HOW GORGEOUS IS THIS STARTER??? The colours made me so happy eeeeeee fried pap w/ artichoke and Kokstad truffle Side-eying you cause this was easily the best thing I drank this entire weekend. Nina’s Pineapple Tonka Bean Margarita is a taste I will dream of till death do me paaaaarrrttt if u like a sweet drink and u find yourself at Salsify ORDER THIS DRINK yum Shay doing our table side!!! I am honestly so beyond privileged to have sat at this table and walked away with these pics, and to be able to do it with my friends by my side on my birthday even though they were working is just so beyond special it actually feels like a fever dream. Thank you for this pic @salsify_at_the_roundhouse - and thank you for letting my family come out to take it even though service wasn’t finished. I love these faces with my everything I will not sleep on a birthday cake - I don’t care where I’m at or what the taken in Cape Town, South Africa by @bliksemskitchen

A quick Bliksem update this fine Sunday: Everything’s been so overwhelming recently and trying to keep up with school, work, myself, and also needing to turn down opportunities with my dream companies for a long term goal has been EXHAUSTING over these past few weeks. The prospect of collaborating with @hugosocialclub on a kitchen takeover totally took over my life for about a week but logistically, now simply isn’t the time. That being said, I do intend on bringing you many events like this in the near enough future! The project pile in the final push of second year has also resulted in turning down some small odd jobs with @studio_h_ - a brand that you all know I dream to work with. All of that being said, I’m working on some teeny things with some of the brands that you and I have come to trust together and I’m so excited for that! I’m slowly getting the hang of all of this again and intend on bringing my content back to its full self SOON.
