POSTS STORIES REELS

I am an huge believer in blurring food and wellness, one cannot truly exist without another. And @bo.lan_essentially_thai has succeeded in the only 5-star wellness menu that adheres to Thai heritage on a fine-dining level (IMHO), in the Bo.lan Escape Wellness experience.

We started with a brain check. Seriously, my brain was on 96%. And then grounded ourselves in the beautiful garden through a number activities, foot soak before being mesmerised by a true Bo.lan meal. As if that’s ordinary, our three meals were customised based on our own TTM (Traditional Thai Medicine) element.

We are individuals, our bodies are unique and so should the food that nourishes us. There is no one size fits all. And we were truly treated as unique beings.

After all of this care taken of us, we had a nap and checked our brain again and I relaxed so much more compared to when I started.

Thank you so much chef @chef_bosongvisava and chef @bolanbangkok. It felt like the best 4-hour city getaway that I was lucky enough to share with good friends.

The secret to a fine curry paste is not strength. It is technique.

Our chefs begin with a pinch of coarse salt, which gives the ingredients grip and helps preserve them. Each strike is paired with a gentle twist of the wrist, spreading the paste across the stone so it becomes smooth. And the order matters: dry, hard ingredients first, soft and wet ones last.

These small details, passed on hand to hand, are what our chefs share in every class at Bo.lan Educational Program.

Every great Thai curry begins in the mortar, and most of them begin with red.

Red curry paste is often called the mother of Thai curries. On its own, it becomes a classic red curry. Pound in roasted peanuts and it turns into Panang. Add dried fish and it becomes Kua, deeper and more savoury.

Before a scrap hits the bin, we ask one question at Bo.lan Educational Program: can this be given a second life first? A vegetable trimming might become stock, a peel might flavor a broth, and only what's left becomes compost. It's a small pause that changes how a kitchen thinks about waste — treating every ingredient with intention, right down to its final use. This is food literacy, practiced daily.

Just steps from our stove, Bo.lan's organic garden quietly does its work — water pennywort spreading along the ground, coral vine climbing toward the entrance, bees drawn to its blossoms. These aren't just decorative plants; many find their way onto our students' plates, connecting what's grown to what's cooked. It's a reminder that food literacy starts before the kitchen — in the soil, the season, and the plants we choose to grow.

In organic farming, clean water is just as important as healthy soil. Farmers must carefully monitor irrigation water to ensure it is free from contamination caused by industrial waste or chemical runoff from nearby conventional farms.

Bo.lan Educational Program, this highlights how sustainability depends on safeguarding every element of the food system from the soil beneath our feet to the water that nourishes each harvest.

Organic farming protects biodiversity by maintaining natural spaces such as hedgerows, flower strips, and wild zones that provide habitats for beneficial insects and wildlife. These areas attract pollinators and natural predators, helping farms stay balanced.

At the Bo.lan Educational Program, this shows that sustainability is not only about what we harvest, but also about what we preserve around the fields.

Lemongrass, galangal, kaffir lime, holy basil, betel leaf, coriander root, fingerroot.

Thai cuisine draws on dozens of fresh herbs, each adding its own layer of aroma and depth. This variety is not only a gift to the palate. It reflects the rich biodiversity of the land and the farmers who keep these plants growing.

When we protect biodiversity, we protect flavour itself. In our classes, participants learn to recognise, handle, and cook with these herbs, building a closer connection with the plants behind every dish.

Before composting, we ask a different question at Bo.lan Educational Program: can this be upcycled first? A vegetable peel might become a crispy garnish, a stem might flavor a broth — small shifts that give kitchen scraps a second purpose before they return to the soil. It's a mindset we build into every class, teaching students to see potential in what's usually discarded. Waste reduction starts with imagination.

What happens when a team steps away from their desks and into the kitchen?

Conversations start easily. Colleagues share tasks, solve small problems together, and laugh over sizzling woks. Cooking naturally builds trust, teamwork, and connection in a way few meeting rooms can.

Our Corporate Workshop welcomes groups of ten or more, with classes tailored to your team and add-ons such as lunch. At the end, everyone sits down together to enjoy the dishes they created. A meaningful, memorable way to bring people closer.
