black garlic mole steak w salsa matcha

brown butter basted ribeye.
puree of turnip and garlic confit.
chili glazed carrots.
gremolata.
salsa matcha.

Pan sauce w steak drippings, red wine, beef stock, and a paste of guajillo and pasilla chiles (ingredients in our salsa matcha). I add black garlic and butter at the end for a silky and rich sauce reminiscent of mole.
