Meet @bronterestaurant, chef Wade Watson’s first fine dining concept in the Philippines.

Named after the beach just south of Bondi, this swanky new Australian steakhouse trades gimmicks for seriously good food: masterfully cooked Australian beef, exceptional bread, a stellar wine and Champagne collection, and Watson’s signature no-nonsense approach to hospitality.

At a time when restaurants often boast elaborate storytelling and theatrics, Brontë takes a refreshing step back. The restaurant feels much like its creator—sharp, confident, irreverent, and entirely uninterested in unnecessary fluff.

Expect a menu built around quality ingredients and precise execution. While there, try standout dishes like the juicy MB9 côte de boeuf, an addicting milk bread glazed with honey, roasted barramundi with a meunière-style sauce, or a decadent foie gras torchon.

In true Wade Watson fashion, the menu won’t stay the same for long—so no two visits are ever quite alike.

Chef Wade Watson of @bronterestaurant cooks up the concept’s signature Côte de Bœuf using a premium MB9 butcher’s cut. Nothing rushed and no frills, just “simple done well.”

At the steakhouse, freshness, quality, and technique take precedence over unnecessary embellishment. From carefully rested steaks to premium Australian meats and produce, each dish is designed to let exceptional ingredients speak for themselves. As Chef Wade puts it, the basics always win.

“The best employees I have are the poorest with the worst education that simply want to work. If you have a good attitude and you want to learn, you’re good,” Chef Wade Watson tells Rolling Stone Philippines in the middle of our meal at his newest restaurant, Brontë (@bronterestaurant).

The Australian chef has spent years working at different fine dining restaurants around the world, from his home base down under to Hong Kong and Canada (“I just went snowboarding and drank alcohol for six months — terrible,” he recalls). He has also put down roots in the Philippines, opening Makati’s Bondi&Bourke in 2015.

Like Bondi&Bourke, Brontë is named after another beach in Sydney and offers refined Australian cuisine, presented without the pomp of degustation. There is much to choose from the à la carte menu.

No foams. No gimmicks. No unnecessary theatrics.

At Brontë, chef Wade Watson is bringing diners back to the fundamentals: premium Australian beef, timeless dishes, classic desserts, and a wine program built for serious enthusiasts. And by doing so, he’s proving that great dining doesn’t always need reinvention—sometimes it simply needs exceptional ingredients and proper execution.

My little family takes birthdays and milestones quite seriously. We love a good celebration, and more often than not, that means breaking bread with the people we love.

We’re also creatures of habit, and it takes a lot to get us out of the house and away from our home cooking. So when we do go out, we tend to return to the same places we know and love. Adding somewhere new to our list of family favorites for celebrating milestones is actually a pretty big deal.

But this is one new favorite I don’t want to gatekeep. Brontë has become a very welcome addition to our list. We celebrated my 57th there recently, and Chef Wade did not disappoint. The food was wonderful, the evening felt relaxed and special, and most importantly, I had my favorite people around the table.

Thank you, Brontë, for making an already meaningful time with family even more memorable. I have a feeling there will be many more milestones we will celebrate at your table, with more of our favorites coming from your kitchen.

🧡🧡
