Made daily, we layer our tart with foie gras mousse and layer with fresh peach, peach marmalade and glaze with a delicate dongchimi gelée. The richness of the foie gras is balanced by the gentle sweetness of peach, while the fermented acidity of dongchimi brings brightness and complexity to the bite. taken in New York, New York by @bskimoiji

Truffle Hunting and the Stories I Never Knew

I recently experienced truffle hunting in Umbria, Italy. Alba in Piedmont is renowned for its white truffles, while Umbria is considered one of Italy’s finest regions for black truffles.

Truffles are now common in both fine and casual dining, but this experience showed me what happens behind the scenes.

At the heart of truffle hunting are highly trained dogs. Their extraordinary sense of smell makes finding truffles underground natural, but the challenge is that they love truffles too. It can take years of training to teach them to find the truffles without eating them.

I also learned about a darker side. Licensed hunters can forage on designated public land, making competition extremely intense. I was told there have even been cases of poison or broken glass being left to harm competitors’ dogs. It was shocking to learn how far the competition surrounding a single ingredient can go.

I’ve worked with truffles countless times, but experiencing the process firsthand changed how I see them. Behind every truffle are nature, seasonality, trained dogs, and the dedication of the people
who search for them.

It reminded me to appreciate this ingredient more deeply and to treat it with the respect it deserves.

Designed by @avroko, Oiji Mi’s dining room has been recognized by two of the hospitality industry’s most prestigious design awards, receiving Best Fine Dining Restaurant at the 42nd Gold Key Awards for Excellence in Hospitality Design and the Upscale Restaurant award at the 19th annual HD Awards.

Drawing inspiration from the architecture of a traditional Korean hanok and the early 20th-century social clubs of the Flatiron District, the space brings together two places that shape our identity: Korea and New York.

Warm timber, soft colors, brass details, and intimate lighting create a setting that feels both familiar and distinctly its own.

Much like our food, the design lives between tradition and the present — rooted in Korea, yet composed for New York. taken in OIJI MI by @bskimoiji

Galbi, traditionally made with marinated beef short rib, takes a different form at Oiji Mi. Rather than grilling the short rib as a whole cut, the beef is portioned and skewered for grilling, creating caramelized edges while keeping the meat tender.
The galbi is served with a warm barley salad and choclo corn, alongside a sauce inspired by classic vichyssoise.
Peach geotjeori (겉절이) brings freshness, gentle acidity, and seasonal sweetness to the dish, complemented by a potato and leek salad on the side.
A familiar Korean preparation, expressed through a different approach to the grill. taken in OIJI MI by @bskimoiji
