How to make apple jelly.

From mid-summer through to autumn I am always scouring my garden and the surrounding area for windfall and crab apples. While they may not be great for eating, they are preservers best friend. I usually make huge gluts of jams, jellies and chutneys to see me through the darker months of the year.

Here is an easy-to-follow apple jelly recipe, featuring some really special Irish heirloom varieties which I picked up on a recent visit to the Irish Seed Savers in County Clare.

“The window for us to find the last couple of unique varieties is closing”.

It’s interesting to consider the politics around food, and how government miscalculation can often result in the erasure of heritage. Thankfully there have been people throughout the ages who have taken matters into their own hands.

@irishseedsavers.ie have managed to save hundreds of rare heritage apple tree varieties that were at risk of being lost to time, but there is still some work left to do.

I had never considered how preparing crops for seed harvest would be different from regular growing until I visited @irishseedsavers.ie.

Rather than pulling crops when they are green and fresh, they are pushed beyond that in the first phase of natural drying on the plant. This ensures they will be able to keep for the long term.

There are two more drying phases, in a purpose-built solarium and a drying room with steady ambient temperatures.

Chapter 2 – Irish Seed Savers is out 1 May

In this episode I travel to County Clare to meet @irishseedsavers.ie, an environmental non-profit that does important work preserving the country’s native heirloom seeds, while making them available to the public.

They are also caretakers of Ireland’s heritage apple tree collection, with over 180 rare varieties across their orchards.

Many of these indigenous trees were at serious risk of being lost forever, but through their incredible research and hands-on approach in which they worked directly with the public in communities across the country they have managed to catalogue and save these trees for future generations to benefit from.

They champion biodiversity, organic practices, soil health and regenerative farming, utilising age-old techniques. It was truly inspiring to meet all the people involved and to learn more about our heritage food crops.

Leviathan Chapter 1 - Woodcock Smokery

An excerpt from our first episode. As well as spending my time at @woodcocksmokery learning from the master Sally Barnes, I also had the chance to join local singing group Medazza for a rendition of Báidín Fheilimí.

This is a traditional Irish song which originates in the Gaeltacht region in the north-west of County Donegal, which is usually taught to young children. It is based on the immortalistion of a small boat owned by a man called Feilimí (Phelim) heading to Tory Island.

It felt like the perfect choice given the subject matter of our visit, and the group has actually been travelling around Cork county sharing more songs about the sea to raise money for lifeboats. A special thanks to the extremely talented Clodagh Simonds.

I’m delighted that music is playing a role in this video series. It has always been a big part of my life, and prior to training as a chef I toured as a professional musician for the better part of ten years. To have it intersect with food in this way feels wonderful.

A tasting of the finest seafood available, lovingly prepared by @woodcocksmokery, the last remaining person in Ireland to exclusively smoke wild fish.
