How to make apple jelly.

Full video (as well as a written step-by-step version of this recipe) available at the link in my bio. Just click on the YouTube tab.

From mid-summer through to autumn I am always scouring my garden and the surrounding area for windfall and crab apples. While they may not be great for eating, they are preservers best friend. I usually make huge gluts of jams, jellies and chutneys to see me through the darker months of the year.

Here is an easy-to-follow apple jelly recipe, featuring some really special Irish heirloom varieties which I picked up on a recent visit to the Irish Seed Savers in County Clare.

“The flavour has a direct relationship with the nutrients. The healthier the soil, the healthier the crop”.

An interesting conversation with @irishseedsavers.ie about the difference between heritage crops vs mass produced fruit and vegetables.

A discussion with Damien Regan, Garden Manager at @irishseedsavers.ie about the benefits of organic growing and the need for subsidies and better education to be in place to support people wishing to make the switch.

We discuss the issues around the cost of eating well in today’s climate. Is it fair that a healthier way of life is only becoming accessible to the wealthier members of society?

In countries like the United States the class divide is more stark, but it’s across the board.

“The window for us to find the last couple of unique varieties is closing”.

It’s interesting to consider the politics around food, and how government miscalculation can often result in the erasure of heritage. Thankfully there have been people throughout the ages who have taken matters into their own hands.

@irishseedsavers.ie have managed to save hundreds of rare heritage apple tree varieties that were at risk of being lost to time, but there is still some work left to do.

“We take so much from the earth. The earth provides us with food, with energy, with clothes, so it’s really important to give back to the soil”.

Did you know that some dried seeds can last for up to ten years and longer?

A fascinating discussion with Deirdre Morrisey of @irishseedsavers.ie about the final stages of drying seeds for storage at their living seed bank.

I had never considered how preparing crops for seed harvest would be different from regular growing until I visited @irishseedsavers.ie.

Rather than pulling crops when they are green and fresh, they are pushed beyond that in the first phase of natural drying on the plant. This ensures they will be able to keep for the long term.

There are two more drying phases, in a purpose-built solarium and a drying room with steady ambient temperatures.

Leviathan Chapter 2 - Irish Seed Savers is out now.

“The Irish heritage apple trees were in decline. The Irish native seeds were in decline, and nobody was saving them”.

An excerpt from a conversation with Gillian Lattimore, Communications and Development Manager for @irishseedsavers.ie about the history of the organisation.

We can thank the Irish Seed Savers and the work of pomologist Dr. Keith Lamb (who actually set off across Ireland on a bicycle) with resurrecting our precious heritage trees.

Chapter 2 – Irish Seed Savers is out 1 May

In this episode I travel to County Clare to meet @irishseedsavers.ie, an environmental non-profit that does important work preserving the country’s native heirloom seeds, while making them available to the public.

They are also caretakers of Ireland’s heritage apple tree collection, with over 180 rare varieties across their orchards.

Many of these indigenous trees were at serious risk of being lost forever, but through their incredible research and hands-on approach in which they worked directly with the public in communities across the country they have managed to catalogue and save these trees for future generations to benefit from.

They champion biodiversity, organic practices, soil health and regenerative farming, utilising age-old techniques. It was truly inspiring to meet all the people involved and to learn more about our heritage food crops.

The episode will be available at the dedicated Leviathan YouTube channel, with the link in our bio, as well as at www.LeviathanFood.com

Leviathan Chapter 1 - Woodcock Smokery

An excerpt from our first episode. As well as spending my time at @woodcocksmokery learning from the master Sally Barnes, I also had the chance to join local singing group Medazza for a rendition of Báidín Fheilimí.

This is a traditional Irish song which originates in the Gaeltacht region in the north-west of County Donegal, which is usually taught to young children. It is based on the immortalistion of a small boat owned by a man called Feilimí (Phelim) heading to Tory Island.

It felt like the perfect choice given the subject matter of our visit, and the group has actually been travelling around Cork county sharing more songs about the sea to raise money for lifeboats. A special thanks to the extremely talented Clodagh Simonds.

I’m delighted that music is playing a role in this video series. It has always been a big part of my life, and prior to training as a chef I toured as a professional musician for the better part of ten years. To have it intersect with food in this way feels wonderful.

“Marine protected areas - it has to happen”.

An important and enlightening conversation with Sally Barnes of @woodcocksmokery regarding what she feels needs to happen in Ireland to secure the future of our waters and to make way for a more sustainable fishing model.
