AAN TAFEL ♥️ JIJ EN IK
Ik las deze week bij @mariehfrank s Substack dat veel mensen uit de food wereld ontvolgt worden als ze iets over politiek zeggen. Dat klopt dacht ik….ik voel dat ook dus ik repostte het. Waarop ik behoorlijk wat reacties kreeg. Want als ik ook maar iets post dat met de wereld te maken heeft dat appelleert aan onze strijd cq verantwoordelijkheid voor rechtvaardigheid krijg ik altijd wel een paar ontvolgers. Misschien niet veel maar toch het doet me wat. Willen we niet allemaal dat de wereld beter en mooier wordt, rechtvaardiger, eerlijker? Samen zijn we toch sterk.
Dus ik wil je met liefde uitnodigen om aan tafel te blijven zitten, want is het niet dat verbinding precies is wat de wereld nodig heeft, meer dan ooit op dit moment?

Gelukkig gaan we dat aanstaande dinsdag weer doen in de fantastische sfeervolle grachtenkeuken van @mataydemayee waar we samen jullie host zijn en je een warme avond beloven met gerechten uit de grote Mediterrannee, met haar verhalen en achtergronden. Persoonlijk, dichtbij en warm een diner ervaring die je ziel koestert en je smaakpapillen streelt. Samen de grond delen onder de tafel, maakt dat we voor altijd verbonden zijn. Eten is cultuur, verbinding en identiteit. Kom aan tafel, we hebben nog een paar plekjes. DM me! Omdat Gaza meer is dan verwoesting en genocide schreef ik mijn nieuwsbrief over het geweldige Gazaanse eten van mijn vriendin en chef @salma.barakat84
Daarover lezen en leren. Dat is ook verzet. Cultuur laten we toch niet uitwissen?

En wist je…bold flavours- die zijn uitgevonden in Gaza. Alles barst van de smaak. Pepers knoflook zuur van citroen het kan niet op.
Ook nodig ik je uit om de allerlekkerste pompoendip – pompoen mtabal zoals in Gaza te maken ( je krijgt geen spijt!) en omdat ze in Gaza aan zee wonen, hun beroemde zibdyat gamberi….een Mediterrane garnalenstoof die natuurlijk op smaak gebracht is met hun signature smaakmaker. En die verwacht je niet dat verklap ik je.

BEURRE NOISETTE CAKE
– met kardemon, kaneel, pruim en mascarpone

En ik kan je vertellen dat deze cake gewoon waanzinnig was.

En een goeie reden om mijn #substack #cookingthemed weer eens onder je neus te wrijven.

SUPPERCLUB ALERT !!

5th editie Haniye x Café Mazahar supperclub summer edition, woensdag aanstaande 4 juni
VERPLAATST NAAR 17 JUNI!

Onze supperclub komt met de seizoenen en we hebben ‘m pas net gecommuniceerd, maar hé zijn last minute dingen niet het allerleukste in het leven?

Kom bij ons aan tafel aanstaande woensdag, voor een bijzondere avond uit, op een betoverende locatie in Matay’s keuken op de keizersgracht. Waar je op intieme wijze met ons gerechten en verhalen deelt. Wij houden van de Mediterrannee van het Midden Oosten tot aan Sicilie en dat is ook wat je op tafel gaat proeven. Het soort eten wat wij missen in onze mooie stad, daarom serveren we het aan onze tafel vol ontmoeting.

Menu 4 juni

Labneh met geroosterde groente
Ajo blanco met geroosterde druiven, anijsdragonolie en druivenpekmez
Gemengde bittere salade met kruiden op sinaasappelaioli met pangrattato
Boterige freekeh met specerijen, uien en pistachecreme
Doradefilet op de huid, met een salsa van kappertjes munt knoflook en citroen
Citroengelato/granita met olijfolie
Sinaasappelamandelcake

Our supperclub comes with the seasons and we only just communicated it, but hey, aren’t last minute things the best in life?

Join us at the table next Wednesday, for a special night out, at an enchanting location in Matay’s kitchen on the Keizersgracht. Where you share dishes and stories with us in an intimate way. We love the Mediterranean all the from the Middle East to Sicily and that is what you will taste at our table. The kind of food that we miss in our beautiful city, that is why we serve it at our table full of encounters.

Labneh with roasted vegetables
Ajo blanco with roasted grapes, aniseed tarragon oil and grape pekmez
Mixed bitter salad with herbs on orange aioli with pangrattato
Buttery freekeh with spices, onions and pistachio cream
Sea bream fillet on the skin, with a salsa of capers, mint, garlic and lemon

HANDGEKNOOPTE TAPIJTEN & COUSCOUS

Mijn long time friend @minaabouzahra en ik deden twee pop-ups dit weekend Abouzahra x café mazahar @cafemazahar
Met de pracht handgeknoopte tapijten van Mina en mijn take on ifnouzen couscous ( deze maand in @deliciousnederland ) en nog veel meer heerlijks

(gekonfijte citroencake bijv met gekaramelliseerde clementinejam en kardemomroom)

Eigenlijk kwamen al onze talenten bij elkaar.
Smaak design en stijl! Het was verrukkelijk en mooi en wat een leuke mensen. En op zo n pracht van een lokatie @moustaqbel_amsterdam
(te huur voor al je events trouwens!!)

We gaan het waarschijnlijk vaker doen na alle vragen van onze gasten dus DM ons en dan zetten we je op de mailinglist.

HAND KNOTTED CARPETS & COUSCOUS

My long time friend @minaabouzahra and I did two pop-ups this weekend Abouzahra x café mazahar @cafemazahar
With the beautiful hand knotted carpets by Mina and my take on ifnouzen couscous (also this month in @deliciousnederland ) and much more (candied lemon cake e.g. with caramelized clementine jam and cardamom cream)

Actually all our talents came together. Taste design and style! It was delicious and beautiful! At the beautiful @moustaqbel_amsterdam (to rent for events!)

8 GANGEN LIBANEES UIT BEIROET | 8 course Lebanese inspired from my book Beiroet

Ik heb echt op veel gekke plekken gekookt
maar nog nooit in het kleinste keukentje middenin in een kroeg op de Amsterdamse zeedijk.
Waar iedereen volledig op je vingers kijkt, en dat op 2 vierkante cm. En dan 8 gangen plated waaahhh
Natuurlijk had ik thuis forever gemise en placed want anders kan het natuurlijk sowieso niet.
Het blijft een waanzinnige kick als zo n uitdaging dan perfect lukt. Kapot was ik want het voelt ook altijd als een soort optreden: met zelfs applaus aan het einde♥️

I have cooked before in crazy places but never in the tiniest kitchen in the middle of a pub on the famous Zeedijk in Amsterdam. Where everyone is watching all you do on 2 cm2. And I served 8 courses plated. Obviously I mise en placed too forever otherwise no way. But what a kick when it all comes together perfectly. I was exhausted it always feels like a kind of performance: the good thing they clapped at the end♥️

Ik ga weer veel leuke collabs doen en deze is de eerste dit jaar:

LABNEH SOFT SERVE

I got back into my substack life, and made you a Christmas dinner!
There is all kinds of things, chestnuts, kaymak, rabbit with quince pekmez pistachio and sage as a main but it could never be me if there wasn’t a bit of labneh.

It’s the kind of pizza meets flatbread made of chickpea flour, salt and a real nice olive oil.
Cooked in the oven until crisp golden outside and creamy inside. Kinda streetfood with roots in Liguria Piemonte Tuscany and even in Northern Africa!
Delicious on it’s own but we will pair it with bold delicious toppings 🍊

Like this one with Stracciatella, mandarin dressing and pistachio, totally inspired by Sicily, the home island of Chiara and a great love of mine.
