Apples, for fall? groundbreaking 🍂🍁🍃

This caramel apple cheesecake is made with a shortbread base, smooth vanilla cheesecake, cinnamon- spiced apple filling, biscuit crumble and a drizzle of caramel

Tips for the perfect cheesecake:

🍎 par bake! We bake the crust first before topping with the cheesecake and apple filling. We don’t do this for our apple tarts! So it depends on the filling. It’s really easy to overdo the crust this at this stage. You want it juuuust golden brown, otherwise your base can be crunchy and bitter.

🍎 slice carefully! For a professional-looking result worthy of any bakery, clean your knife in between slices. You want to use a serrated knife, heated if needed.

🍎 test test test! For the perfect result, we wanted the vanilla cheesecake base to be perfectly creamy. It’s crazy easy to overbake this! Every oven is different, so we made this a crazy amount of times before putting it on the menu. Tweaking and perfecting as we go!

SALTED THIN COOKIES 🍪

Made with heavily browned butter, vanilla and a pools of melted dark chocolate. For us, this is the perfect crispy cookie 😍

Our tips for the perfect crispy cookies:

💌 spread! We only tray up 4 per half tray to avoid one big cookie forming in the oven!

💌 shape! This step helps make our cookies look more uniform so they look perfect stacked together on our shelves

💌 tap tap tap! We do this twice, once halfway through baking and once they come out of the oven too. More surface area = more of that crispy exterior
