The town of Woombye on Queensland’s Sunshine Coast is home to the iconic Big Pineapple, some of Australia’s most lush landscapes and Woombye Cheese Company. It’s from this idyllic corner of the country that the local milk is sourced for Woombye’s award-winning cheeses, giving a true taste of Queensland terroir (though, as yet, pineapple does not feature).

Yesterday, the incomparable affineur, @fromageriesmarcelpetite Fromageries Marcel Petite, celebrated the 60th anniversary of its legendary Fort Saint-Antoine, and we were privileged to take part in an extraordinary event honouring the craftsmanship, heritage and enduring pursuit of excellence that defines their business.

The highlight of the celebration was the surprise unveiling of Fort Catinat, a former military fortress perched at 1,170 metres above sea level. Offering exceptional maturation conditions, this remarkable site secures Marcel Petite’s long-term ability to diversify its ageing cellars and further unlock the unique potential of every wheel.

A hard sheep’s milk cheese crafted from the milk of Lacaune sheep, the cheese opens with grassy aromas and notes of dried hay, balanced by a delicate buttermilk creaminess. @applebyscheese @nealsyarddairy - Appleby’s Cheshire is a semi hard raw milk cheese with a crumbly open texture. Its flavour is often described as mineral, with fresh and zesty overtones. Hawkstone Abbey Farm is located on the Cheshire Basin where for thousands of years shallow seawater repeatedly evaporated leaving layers of salt on the land. The cows graze on the salty pasture and the mineral flavours permeate their milk.

Lightly coloured with annatto, the pressed cheese is cloth-wrapped and matured in the natural cool barn on the farm.

This mild cheese pairs wonderfully with dried fruits, chutneys and pickles.
