Some cheeses are so good, people are still talking about them 17 years later! šŸ§€šŸ’›

Yesterday was one of those really special afternoons. Sitting around a table with Laura Simon, Amanda Menegazzo, Julia Jenkins, Steve Brown and Burke Brandon, chewing the fat (and some very aged cheese!) and sharing stories, ideas and a little bit of cheese-making history.

We had the privilege of tasting the very last pieces of Ironstone cheese from Piano Hill.

Ironstone hasn’t been made since 2009, yet people STILL remember it. The flavour, the character, the story behind it. That’s pretty incredible when you think about it. Shoutout to Anthony @makerandmonger for putting the idea in my head to contact Steve!

For Steve, it was also a special moment. A chance to share a piece of his cheese-making history and on-farm dairy factory and close a chapter that meant so much.

Steve Ronalds and I have been pondering for almost 2 years about …

How do you create a cheese that people will still be talking about in 20 years?

That’s the exciting challenge ahead of us at Gippsland Jersey.

We’ve bought a cheese factory, we’ve got beautiful Jersey milk (Australia’s BEST), and now we’re working out what we can create that’s truly special to Australia. Not just another cheese on a shelf, but something with character, a sense of place and a legacy of its own.

We’re also incredibly lucky to have award-winning local Gippsland cheesemaker Burke Brandon joining us part-time, bringing his knowledge, experience and creativity to the table.

A huge thank you to Amanda @ediblepress , Julia, Laura @calendar_cheese and Steve for so generously sharing your wisdom, stories and encouragement.

There’s something pretty wonderful about bringing good people around a table, eating cheese and dreaming about what might be possible.

And who knows, perhaps in another 20 years someone will be sitting around a table talking about a Gippsland Jersey cheese in exactly the same way.

Wouldn’t that be something!
