Cutting out cheese because of lactose? You might be cutting it out for no reason. 🧀

Real cheese doesn’t deserve the blame it gets!

Most traditional, aged cheeses naturally contain little to no lactose thanks to the fermentation process. Meaning… if you’ve been avoiding cheese, you might not have needed to all along.

A glass of milk has significantly more lactose than a piece of real, aged cheese.

So yes, you can eat cheese. And not just any cheese… the kind we source and cut every day here at Caputo’s.

Come in, taste the difference, and find a cheese your body can actually enjoy 🧀 taken in Salt Lake City, Utah by @caputosmarket

Caputo’s x Normal Ice Cream🍫🍦

Ingredients that carry a bigger story.

For years, Caputo’s has worked to help preserve one of the rarest wild cacao varieties in the world through our Wild Tranquilidad chocolate bar, crafted with Utah chocolate makers at @ritualchocolate. What started deep in the Bolivian rainforest became a bar that means so much to us. Not just for its flavor, but for everything it represents: preservation, craftsmanship, relationships, and care for the future of chocolate.

Now, that story continues in a new way.

Introducing the new @normal.club collaboration featuring our Wild Tranquilidad chocolate folded into a one of a kind stracciatella ice cream. The rich depth of the cacao, layered with notes of citrus, spice, dried fruit, and cocoa, comes together in a way that feels both nostalgic and completely new.

This collaboration is deeply local, bringing together people and makers here in Utah who care deeply about ingredients, process, and storytelling through food.

@nwchocolate in Seattle is always a highlight of our year, bringing together colleagues and chocolate friends from around the world. 🍫

This year was especially meaningful as Caputo’s had the honor of presenting @luisaabram with the @heirloomcacao Preservation designation recognizing the wild Juruá cacao of Novo Horizonte, the Brazilian Amazon community that harvests and processes these extraordinary beans.

Years ago, when this cacao risked disappearing from the market, Caputo’s Preservation Program committed to keeping it available. It was too special to lose. Today, HCP has independently recognized its exceptional quality and flavor; a deeply meaningful milestone for everyone who has worked to preserve it.

Join the preservation story and experience this prized cacao in Caputo’s Wild Juruá chocolate bar. (It’s the red one 😉)

Congratulations to Luisa, her family, and the Novo Horizonte community. And congratulations to the thriving chocolate community that comes together annually to celebrate people, origins, and the beautiful cacao that makes it all possible. 🍫 by @caputosmarket

Brazil’s first Heirloom cacao comes from the wild Amazon. 🌳🍫

Yesterday, the Heirloom Cacao Preservation Fund (HCP) officially designated the wild cacao from Novo Horizonte, on the Juruá River (Amazonas), as the world’s 25th Heirloom designation: HCP25. This is the first time a Brazilian cacao has received this recognition.

HCP is a nonprofit organization that works in partnership with USDA/ARS to identify and preserve the most exceptionally flavored cacaos on the planet. The evaluation is conducted blind by an international panel of experts from houses such as Valrhona, Guittard, Felchlin and Hershey, as well as the Cocoa Research Centre in Trinidad and Tobago.

The panel highlighted the complexity of our cacao: fresh red fruits that evolve into raisins, dates and port wine, floral notes of lilac and jasmine, and a long, refined finish. In their words, a cacao that “should be preserved and propagated.”

This recognition belongs, above all, to the families of Novo Horizonte, led by Aires and Osmir Andriola, who have safeguarded this cacao in the forest for generations. It is also the result of years of work by our team on fermentation, traceability and direct partnership with the riverside communities.

At Luisa Abram, we believe the standing forest is worth more. Excellent wild cacao generates fair income for those who live in the Amazon and gives them a concrete reason to protect it. HCP25 shows that this path works.

Thank you to Alyssa D’Adamo, Richard Tango-Lowy and the HCP panel.

And congratulations to the Luisa Abram team, @deabanks, @alanfabio, @lu.abanks, @mirianabram and @gustavodionizio, for dreaming this up long ago. Thank you @mcaputo801 @ycaputo @a_priori_foods. None of this would have been possible without you!!
