It's really spring now! L'ail des Ours, or bear garlic, ramps, is covering the woods' floor. Time to forage in the woods to make spring pesto.
And time to demonstrate so that our precious natural resources will be protected for generations to come!
A huge shout-out to all of you who put your feet on the ground or stood on your stoop or kept in contact as best you could to say "NO" to an oligarchic government who wants the power given to the rich to rip off all our natural resources and beneficial public services. We must and will prevail.

Fifty-two years married today. Yesterday, our older son Jacob turned 50. Yasha turns 80 in November. Our younger son Akim turns 50, 17 months later, and I will turn 80 two weeks after . Magical numbers. Hold tight to your loved ones. There's nothing like the Present. The only things that count are Time, Qualities, Friends and Companions. And don't forget the importance of your Vote. I cut the daffodils to save them from getting crushed by snow. They were announcing a snow "hurricane" but all we got was a sprinkle of ice crystals and frost. The colors in these flowers are mesmerizing. I counted six distinctly different yellows. Spring is right around the corner.

More ferments. Sourdough discard for crackers today, autolyze for bread shaping tomorrow, creme fraîche in 48 hours. It takes just minutes to put together and then they rest and do the work on their own. So good for you and so delicious. If you think you are gluten intolerant, try good flours and long fermentations. You may be surprised. Or maybe not, but the health benefits are worth the try.

Cracker day. Keeping the starters active by feeding them daily. So easy!
Using the discard to make crackers.

To an approximate half pint (125ml) of discard I add a glug of xxv olive oil and a tsp. of ancient sea salt, and just enough rye flour to make a soft, rollable dough. I put the dough between two sheets of parchment and roll it as thin as I can, folding the edges of the paper as I go th keep the edges from getting ragged until the dough is the size of a half sheet pan. (Or use two smaller pans.) Remove the top parchment and lift the bottom paper and dough onto the baking pan. Score the crackers into squares or rectangles and prick with a fork. Put into a cold oven (yes!) And bake at 325F/180C for about 30 min. Or longer until we'll set. Reduce the temperature to 170F/80C for an hour or more to dry out. It may take longer to get really crisp. ( If you're busy and have to leave, turn the oven off and finish the drying out later.) If you're working with a wood burning stove, remove the pan before the crackers get too dark and let them finish on a rack over the stove.
Variations:
Use any discard you have and flours of choice, but do use organic/bio whole grain flours for optimal nutrition.
Add an assortment of seeds before adding the extra flour and/or sprinkle and press seeds on too before scoring.

The Headquarters is a new venue in our town, Nevada City, and we got to do some of our favorite tunes that we've collected over the years. What a pleasure to play with our son. He's back! Someone else came to witness last night's sunset, a Cooper's Hawk. He comes this time of year and hangs around our garden through spring before moving on his way. He'll be joined by a female later in Spring. Life rolls on.

Christmas night. All is peaceful here in the mountains. Our thoughts and wishes go to those the world over who are less fortunate and are caught in terrible conflicts began long before the origin of Christmas or Chanukah.
