it’s still 100° outside… but i’m making soup. 😂🍂🥣

This Spicy Italian Soup is officially making its way into my fall rotation. 🌶️🍲 It’s hearty, packed with veggies, and has just the right amount of spice from the Italian sausage.

Basically… everything you want in a bowl of soup when the weather finally decides to cooperate. 👏🏼

Ingredients👇
Olive oil
1 lb spicy Italian sausage
2 medium carrots, chopped
2–3 celery stalks, chopped
½ yellow onion, chopped
3 cups chopped kale
1 can petite diced tomatoes, with juice
1 can white beans, rinsed + drained
8 cups chicken stock
2 cups chickpea shell pasta
Freshly grated Parmesan
Salt + pepper to taste

Directions 👇
Heat a little olive oil in a large pot and brown the Italian sausage, breaking it up as it cooks.

Add the carrots, celery and onion and sauté for about 4–5 minutes, until the veggies begin to soften.

Add the diced tomatoes, white beans and chicken stock. Season with salt and pepper, then bring everything to a simmer.

Add the chickpea pasta and cook according to the package directions, until tender.

Stir in the kale during the last few minutes and let it wilt into the soup.

Ladle into bowls and finish with plenty of freshly grated Parmesan. 🤌🏼

Thank you to Carson’s childhood friend, Lane, for surprising us with FLOOR tickets to Ella Langley’s SOLD OUT show in Austin last night!

Getting to watch him play fiddle with @kaitlinbutts as they opened the show made the night even more special. They CRUSHED the stage.

Am I the last person in Austin to discover H Mart?! 🇰🇷😂

I could have spent HOURS wandering this place. If you love cooking, trying new foods, or discovering cultural gems around Austin, this is one spot you need to add to your list.

H Mart is a South Korean-rooted American supermarket chain.

The “H” stands for Han Ah Reum, a Korean phrase meaning “one arm full of groceries.” Honestly…that’s exactly how I left. 🤭

What you’ll find:
🥭 Imported fruits and produce
🍄 More mushrooms than I’ve ever seen in one place
🍜 Entire aisles dedicated to ramen
🦀 Live seafood
🍱 A huge food court

And that’s not even everything! There’s also a fresh bakery, K-beauty products, an arcade, specialty shops, and so much more.

My favorite part was definitely the live seafood. I spotted cuttlefish, baby octopus, razor clams, and so many fish I’d never seen before. The produce section was beautiful too, with amazing prices like $3 dragon fruit and 50¢ honey mangoes.

What came home with me?
🥒 Cucumber kimchi
🧄 Garlic puree (can’t wait to use it in homemade ginger dressing!)
🦐 Shrimp garlic chips (my sister-in-law insisted I try them!)

The store was incredibly clean, well organized, and everyone was so friendly. If you’re in the Austin area, it’s absolutely worth the trip to Cedar Park.

Fair warning…your first visit probably won’t be your last. 😅

Would y’all want a Part 2? I barely scratched the surface of this place!

Easy Smoked Elote Dip 🔥🌽

I was blown away by how many of you saved and shared my Tex-Mex Hot Dog video yesterday — over 150 saves and shares! Thank you so much for all the love and support.

Since so many of you wanted to recreate the recipe, I had to make sure you had the smoked elote dip too.

This smoky, creamy elote dip is everything you love about Mexican street corn turned into a shareable, scoopable appetizer. It’s rich, tangy, lightly spicy, and just as good warm as it is chilled. Perfect for chips, BBQ spreads, game day snacks, or as a topping for hot dogs and tacos.

Ingredients:
• 5–6 ears fresh corn
• 2 tbsp olive oil
• 1/2 cup Greek yogurt
• 1/2 cup mayo
• Juice of 1 lime
• 3–4 garlic cloves
• 1 jalapeño, diced (seeds removed for less heat)
• 1–1½ tsp smoked paprika (to taste)
• 1/2 tbsp chili powder
• 1/2 tbsp Tajín seasoning
• Salt + pepper
• Toppings: cotija cheese + fresh cilantro

How to make it:

1. Shuck, wash, and dry the corn.
2. Heat a large skillet over medium-high heat with a drizzle of olive oil.
3. Add the corn and let it cook undisturbed for 2–3 minutes to develop a char. Continue cooking for 8–10 minutes total, stirring every couple of minutes until evenly blistered.
4. Add the jalapeño and garlic during the last 1–2 minutes so they soften and become fragrant.
5. Remove from the heat and stir in the mayo, Greek yogurt, lime juice, smoked paprika, chili powder, and Tajín. Season with salt and pepper to taste.

Top with cotija cheese and fresh cilantro. 🌿
