Training for Jurassic Park or MoPac traffic… you decide 😂🦖

people really think we just went on a “cute little driving course” 😭

meanwhile we’re out here: driving blind over hills, fording water, learning how not to flip a BMW SUV, and taking directions over walkie-talkies like it’s Jurassic Park

Hear that? 😏🧀

That golden, bubbly, cheesy goodness that’s just as easy to make as it is delicious.

Who wants the recipe? Or should I make a tutorial??👩🏼‍🍳

The sun is shining again in Austin, and it was the perfect day to spend shopping for cookbooks at First Light (one of those Austin places you’re glad someone told you about 😉).

Tucked inside the old Hyde Park post office, First Light Books feels like a little step back in time. I love their lattes, cookbooks and stationery, with something new to look at (or resist buying) every time.

A must-visit Austin spot!

🍅🧄 Tuscan Baked Chicken, my new favorite weeknight dinner 🧀🌿

After being sick all week, I finally felt well enough to cook a REAL dinner again. I was basically drowning in bowls of sad, lukewarm soup 🫣

And WOW. This one did not disappoint.

This Tuscan baked chicken comes together in about 45 minutes, with tender chicken baked in a creamy Parmesan sauce filled with garlic, sun dried tomatoes and spinach. It’s rich, comforting, satisfying and perfect for leftovers.

TUSCAN BAKED CHICKEN

4 boneless, skinless chicken breasts
1 tbsp canola oil
½ tsp salt
½ tsp Italian seasoning
¼ tsp paprika
⅛ tsp black pepper

Creamy Parmesan Sauce

1 cup heavy cream
2 tsp minced garlic
1 tsp cornstarch
¼ tsp salt
⅛ tsp black pepper
⅓ cup chopped sun dried tomatoes
¼ cup shredded Parmesan
½ cup chopped fresh spinach

HOW TO MAKE IT

Preheat oven to 425°F.

Flatten the thickest part of the chicken so it cooks evenly. Place in a 9x13 baking dish.

Drizzle with oil and season with salt, Italian seasoning, paprika and pepper.

Whisk together cream, garlic, cornstarch, salt and pepper. Stir in sun dried tomatoes and Parmesan, then pour around the chicken.

Bake 16 to 20 minutes, until chicken reaches 165°F.

Stir spinach into the sauce, cover and let rest for 10 minutes. If the sauce looks separated, just give it a stir. It will come together!

Save this one for your next cozy dinner. 🍅🧄🧀

Consider this your reminder to put Denmark on the itinerary. 🇩🇰✨

If you’re planning a European getaway, don’t overlook Denmark & the rest of Scandinavia (specifically Sweden!)

It deserves a top spot on your list.
