Introducing our new Grower Spotlight 🥂

Every two months, we’ll be shining a light on an independent Champagne producer and bringing two of their standout cuvées to Champagne + Fromage for a limited time.

First up: Champagne Hautbois @champagnehautbois

Based in Pévy, in the Massif de Saint-Thierry, Hautbois is a fifth-generation family producer led by Sandrine and Fabien. Across their eight-hectare vineyard, they combine generations of knowledge with sustainable, HVE-certified growing practices to create Champagnes that truly reflect their land.

Meet the two bottles:

🥂 Haut’rigine 2015, an equal blend of Chardonnay and Pinot Noir, with ripe yellow fruit, delicate biscuit and brioche notes, and a rich, beautifully balanced finish.

🥂 Haut’thentic, a Meunier-led Champagne with stone fruit, subtle prune, a creamy texture and beautifully fine bubbles.

Harvest 2026 🍇🥂

For a few intense weeks each year, Champagne enters les vendanges, when grapes are picked by hand and brought quickly from vineyard to press, ready to begin their journey into Champagne.

Timing is everything. Ripeness, acidity and the condition of the fruit all matter, and every grower is working towards the wines that will eventually make their way into the bottles we drink.

This year, we went behind the scenes with Colin, Le Gallais, Moutardier and Lacroix to see harvest up close, and meet some of the people behind the Champagnes on our shelves.

A year’s work, a few crucial weeks, and the beginning of your next bottle.
