From an idea born out of the need to pay rent while the restaurant was being built. Ceviche Bar has become a true staple of our weekly service and really allowed our team to shine on the freshest ingredients. In the South, locals are no strangers to pork. Barbecue joints sell it pulled, sliced, diced and just about any way you can think of between two buns. But when Maria La Mota and Chason Spencer introduced the flavors of Ecuador in a bright little storefront called Chancho King, writer Steve Dollar forgot everything he thought he knew about the other white meat.⁠
⁠
“There it is before you, like nothing you’ve ever quite experienced,” Dollar writes. “A hunk of pork the size of a fist, blessed with two sauces—a mild tomato aji and a spicy pepper aji—topped with a pile of pickled red onion and the house-made chicharron (fried pork skin) for a vivid crunch. All of it is barely contained by two slices of Cuban-style bread, poised to land a knockout punch to your palate.”⁠

Don‘t just take it from Dollar. The James Beard Foundation noticed the couple, too. La Mota and Spencer were named as finalists for the 2026 James Beard Awards Best Chef: South. The couple also some loyal customers who have stuck around since their food truck days.⁠

24 hours in Jacksonville. Three stops. Three completely different experiences. 🍳🍺🍽️

Started with an old-school diner breakfast, wandered into a two-story gastropub with 204 taps and 1.1 MILLION pennies on the walls, and finished with a seriously memorable 77-day dry-aged pork dinner.

Here’s where I went:

🍳 @thefoxrestaurant — breakfast, the old-school way. 🍺 @kickbacksgastropub — come for a beer, stay to take in the place. 🍽️ @chanchoking — that pork is still on my mind.

Jacksonville, you gave me plenty to like.
