It’s taken me a couple of days to fully soak it all in, and honestly, I'm still processing this incredible journey. Who would've ever thought I’d be crowned Top Chef Canada?!

I think back to those early years when I was just a fan, watching chefs compete on TV, never imagining I’d be living that dream myself.

This has been hands down the hardest thing I’ve ever done in my career, and I couldn’t be prouder to have represented Vancouver, Montreal, and even Windsor, ON. This win is for everyone out there working hard to achieve their dreams – especially for those who feel like they don’t fit the mold, for the queer community, and for the generations of immigrants pushing for a brighter future.

I put my heart into every dish, winning 6 out of 15 challenges, and battling it out in the finale with two incredibly talented chefs, Moira and Haan – who will forever be friends. Huge thanks to all my friends who cheered me on every week, riding the emotional rollercoaster with me right through to the finale. And a big shout-out to my partner, Cameron, for always "challenging" me with peaches!

It’s been over 10 years since Vancouver had a champion, and I am beyond honored to break the Top Chef Canada curse!

As part of the @visaca Infinite Dining Series, Five Sails Culinary Director Chef @chef_alexk joined Chef @chanthyyen and the team at @toukyvr for an exclusive evening where Cambodian flavours met the Pacific Northwest through a thoughtfully curated multi-course menu.

A celebration of culture, seasonality, and the conversations that happen through food, bringing together two distinct culinary perspectives for one unforgettable experience.

Last week @toukyvr and @chanthyyen hosted its first @visaca #infinitedining series featuring fellow top chef Canada alum @chef_alexk of @fivesailsvancouver.

 The evening truly was a celebration of cultures, flavours and Vancouver immense culinary talents. We were treated to delicious dishes after dishes with stories to tell — from Chef Chanthy’s coconut milk buns to Chef Alex’s gochujang made his grandmother. Each course was impeccably paired with worldly wines curated by @wein.to.wine.

Keep an eye out for the summer line up of Visa Infinite Dining series coming up on June 30th.

Chanthy Yen (@chanthyyen) is a Cambodian-Canadian chef and entrepreneur from Windsor, Ontario, known for elevating Cambodian and Southeast Asian flavors in Canada’s culinary scene. Trained in some of the world’s most respected kitchens, he built his reputation through a cooking style that blends technical precision with a strong sense of identity and heritage.

Yen first made his mark in Montréal, where he opened Fieldstone in 2017 with Emiliano Rivera and quickly gained recognition for his creative, modern approach to dining. He was later named Eater Montréal’s Chef of the Year, a major nod to his growing influence in the city’s food culture. After moving to Vancouver, Yen served as Executive Chef of Nightshade, a plant-based restaurant that earned Michelin Bib Gourmand recognition in both 2022 and 2023. His leadership there helped further establish him as one of Canada’s most watched culinary talents.

Beyond the kitchen, Yen’s profile rose nationally when he served as Personal Chef to Prime Minister Justin Trudeau from 2021 to 2022, becoming the first openly queer and BIPOC chef to hold that role. In 2024, he won Top Chef Canada Season 11, becoming the first person of Southeast Asian heritage to claim the title. In 2026, he opened Touk in Vancouver, Canada’s first Khmer fine-dining restaurant, marking another milestone in a career defined by ambition, recognition, and cultural pride.

One of downtown Vancouver’s hottest new tables is Touk @toukyvr, meaning “boat” in Khmer, from Top Chef Canada winner, Chanthy Yen @chanthyyen, in partnership with Kin Kao Group @kinkaokitchen. Not only is Touk Canada’s first contemporary Cambodian restaurant, but it’s also proudly Cambodian-owned. 🇰🇭

The space and energy is grande, anchored by a large-scale custom wall mural narrating personal stories from the owners.

Largely underrepresented, Cambodian cuisine reflects centuries of influence from China, India, France, Thailand, and Vietnam, resulting in flavours that are bold, aromatic, slightly funky, and comforting, yet still its own. 

The dishes are a reflection of Chanthy, artistically presented, vibrant, and creative in concept. Flavours feel like meeting old friends, but for the first time. It's a thoughtful and creative approach for those discovering Cambodian flavours.

Start with oysters, the "escargot-like scallops", and prawns in red curry and make your way to his Cambodian-style congee from his Top Chef Canada finale, still hits the spot.

The bigger share plates feature a special fried rice, sablefish collars, amok (steamed fish in a banana leaf), which is a nod to Cambodia’s national dish, and a tomahawk pork chop ideal for sharing. 

The desserts continue to showcase skills of a well-rounded chef with an elaborate pineapple bun, egg coffee featuring cold egg foam and mochi crueller with foie gras molasses anglaise. It's a serious menu worth ending on.

Touk isn’t just a new cookie-cutter restaurant, it’s a statement.

So I checked out the Time Out Market and the newly opened Oakridge Park in Vancouver.

📍 650 W 41st Ave, Vancouver, BC V5Z 2M9

Formerly Oakridge Center, Oakridge Park is the newest luxury mall in Metro Vancouver. They have pretty much all of the high end & high fashion shops and the space is just absolutely stunning. I used to work at Oakridge Center and I can say the change is quite dramatic. 

I went mainly to check out the highly anticipated food court that boasts most of metro Vancouver’s renowned chefs at the Time Out Market. I got to try out Mee Bar by Chanthy Yen (Top Chef Winner / Touk Co-Owner) and the amazing Boba Run. 

Going on opening day maybe wasn’t the greatest idea as a lot of things were sold out and I wanted to try a number of stalls. I anticipate the traffic to hopefully regulate in a few weeks so I can try some of the other amazing spots. I can appreciate the concept of having talented chefs all in one hub and while this isn’t your conventional food court, it’s a solid spot to have some of the best our city has to offer in one space!
