Some places become so much more than four walls. THoM is never just a bar. What we keep isn’t always visible. With Hennessy, apples and grapes are transformed and preserved over time, shaped slowly into something deeper, something lasting. In this serve, I take that same idea and apply it to fresh fruit. Apples and grapes are preserved into a shrub, extending their life, while every remaining part is used, and nothing is left behind, with intention. The aroma, built from those same elements, is held beneath a tuile, but then the moment comes. You are invited to break the tuile, and release the aromas. Like a memory, that lasts forever.
