What nobody tells you about going from Chef to Director…

You actually cook LESS. 😂

Now it’s schedules. Budgets. Food cost. Staffing. Meetings. Purchasing. Events. Training. Putting out fires before they become fires.

I used to think being a great chef meant knowing how to run and lead a kitchen.

Now I’m learning that leadership is about building a kitchen that can run without you having to touch everything.

Different apron. Different responsibilities. Same passion.

This next chapter is challenging me to grow beyond what I imagined —and I’m here for it.

People often assume my favorite part of working with restaurants is the food.

Truthfully?

It was never just about the food.

It’s hearing why a family took the risk.
Why a husband and wife bet everything on a dream.
The generations behind each local business.
Why Grandma’s recipes still matter.
Why someone left corporate America.
The late nights and no sleep.

Those stories have always been my favorite part. And now I get to help bring even more of those stories to life. by @chef_big_jay

Do what you love long enough, and eventually the journey starts connecting the dots.

I’ve cooked for a lot of people, walked through a lot of doors, and learned something from every room I’ve been blessed to enter.

The dream was never just to make it.

It was to keep growing, keep creating, keep impacting people—and keep doing what I love.
