Meet an Alchemist: Adam Paul @chefadamp78 | Jackson & Co. @jacksonandcompanycatering
Adam Paul knows his way around Delicious Alchemy.
Last year, he helped send out a juniper-roasted buffalo tenderloin with Petite Syrah and huckleberries, Hubbard squash brûlée and hazelnut-crusted braised leeks.
This year, he’s back.
And we can’t wait to see what happens next.

Tapestry’s Chicken Koobideh pairs deeply charred chicken with roasted tomato and onion, a glossy pomegranate glaze, fragrant jeera rice, warm paratha and cooling garlic raita.

Smoky, spiced and layered with contrast. The kind of plate that deserves the whole table’s attention.

Citrus Marinated Olives
Shaved Fennel & Citrus Salad tossed with fresh basil
Cured Meats & Cheese: Prosciutto, finocchiona, mozzarella di bufala, pickled cippolini, and fresh figs
Charred Endive drizzled with white balsamic truffle gastrique, pink grapefruit, and Marcona almonds
White Bean Puree with olive tapenade, Calabrian chile oil, and freshly grated Parmigiano Reggiano, alongside focaccia and crostini

Primi
Cresta di Gallo Pasta: Tossed table-side in a Parmesan wheel with a Verdicchio cream, Tuscan kale, a three-peppercorn medley, roasted garlic cloves, and crisp pancetta (pancetta can be omitted for vegetarian guests).

Secondi
Garlic Shrimp in a saffron, white wine, butter, and herb emulsion. Charred Sirloin Bistecca finished with salsa verde and a spicy Calabrian chili butter.

Accompaniments
Grilled ribbons of zucchini and yellow squash topped with Marcona almonds, sautéed rappini with crispy shallots, and cherry tomato ragu.
