What happens to a restaurant's payroll when health costs double?

Milwaukee chef Dan Jacobs says he found out in January. When the extended benefits went away, he lost his executive chefs, his director of operations, his general managers — people he says are very hard to replace. Their costs doubled or tripled, and they took corporate jobs that came with coverage.

He owns Dan Dan and EsterEv, employs about 75 people, and puts roughly $7,000 a month toward helping cover their insurance. It still wasn't enough to compete with a company that can offer a plan.
