After losing his two brothers Wayne and Robbie to cystic fibrosis, Vinnie @chefhardygram has been determined to keep their memory alive.

“Robbie and Wayne both loved to cook and that’s when I realised that becoming a chef is what I wanted and what they wanted to do.” said Vinnie.

We chatted to him about dealing with the grief, fundraising for better CF research, and his top tips for people taking part in FeBrewary.

Proper comfort food with a little twist. 💜

Homemade hazelnut & pear bread and butter pudding using @microbakery00 pastries, finished with warm vanilla bean custard and a scoop of handpicked blackberry ice cream from @saffronicecreamco 🍨

Sweet, warming and full of seasonal flavour. 🍐

Using up @microbakery00 left over croissants to create something that everybody loves.

Croissant bread & “butter” pudding. 🥐

You’re probably wondering why butter is in quotation marks, that would be because I’ve put 1.5kg of butter into this batch which when we tried it you could definitely tell it’s got butter in it 🧈

Served with in house custard & @saffronicecreamco vanilla ice cream 🍦

I grew up on bread & butter pudding so it takes me back to my childhood when my mum used to make it a lot with leftover bread 🍞

10 years today you took your last breath, had your last fight, got pain free from cystic fibrosis.

Grief is weird.

I miss you, we came to put some flowers down today & Theo wanted to play with you.

He wonders where uncle Robbie is & I tell him every time look up in the sky and you’re there. He asks when you’re going to come to our house & play in his room, unfortunately I don’t have an answer for that.

Robbie my life will never be the same without you, apart of me is missing. I miss the humour we had, the late night Tesco trips, drinking an insane amount of red bull and just thinking fuck it!.

Keep watching over me everything I do is to make you proud & to keep your name & legacy alive, I will do everything I can.

Rest easy bro, it’ll never get better but I’ll learn to cope a little easier knowing you’re in a better place. Although I do miss the Nando’s halloumi in your hospital visits 🤣💛

Love you bruv xx by @chefhardygram

A knife is more than just a tool… it’s an extension of the chef.

Unboxing this incredible piece from @katto_kitchen has been really exciting as I’ve had my eye on them for a while, Handcrafted in Sheffield using premium Japanese steel and sustainably sourced hardwood, every detail reflects true craftsmanship and a passion for making things the right way. Built by hand, built to last, and built to be used. (Katto)

As chefs, we’re lucky enough to work with tools that inspire us every single service, and this is definitely one of them. I can’t wait to put it through its paces in the kitchen.

Thank you, @katto_kitchen , for creating something so special. Here’s to many years of great food and great memories with this blade.
