An excellent morning in North Saanich with @thatchcreekfarm You don’t just “open” a farm. It takes years of work, planning and then once things do start the never ending endearment to the passion, just doesn’t quit. I’m very excited to see what they have already done and what’s in the works. Please give them a follow to stay in touch about some upcoming events they have planned this winter. #saanich #farm #citrus #victoriabc #northsaanich by @chefpaulmoran
Haida Gwaii, Haáw’aa (Thank You) we had an amazing time with guests, new and old friends and great partners. We covered ground from Skidegate Lake to North Beach. It’s always a pleasure sharing our passion for these islands with other people. Spending time @hekatesretreat and @ancientdunes.ca was perfect. What a trip, and of course the mushrooms. by @chefpaulmoran

Today had some lows and highs… Our prized king boletus mushroom patch has been dismantled by deforestation. On the other hand @sinclairfromcanada was kind enough to share his special chanterelle spot, which did not disappoint. Both areas were on the south west coast of Vancouver island. It’s not even the fact that a prime favourite mushroom spot got logged. It’s the fact the rampant deforestation of southern BC is obviously causing many problems. From dehydrating the surrounding areas, preparing them for wild fires, destroying the habitats of countless species of animals, flora and fauna. Having spent time in this forest for the last 12 years to now see it turned to dust for the second time it has existed is rather sad and concerning. What do you think? by @chefpaulmoran
A rare opportunity to experience the coast through the lens of one of Canada’s celebrated culinary talents. Join renowned Chef Paul Moran for an elevated intimate luxury retreat where exceptional food, wild coastal landscapes, and meaningful connection come together. Hosted October 9-12, with a limited number of spaces available, this exclusive culinary and wellness experience is expected to sell out. by @chefpaulmoran
Can you smell it in the air? Fall mushroom season has arrived. October 9–12, we’re heading to Haida Gwaii for a very special Forage & Feast retreat with our friends at @hekatesretreat. For a few days, we’ll immerse ourselves in one of the most remarkable food landscapes in Canada — coastal forests, pristine ocean, wild mushrooms and ingredients that reflect this place in a way few destinations can. This year’s retreat also falls on the same weekend as the Sandspit Wild Food Festival, bringing even more local experts, foragers and wild-food enthusiasts together for the weekend. We’ll take part in salt-making workshops using pristine Haida Gwaii seawater, harvested just steps from the shoreline and transformed into beautiful local sea salt. And, of course, we’ll head into the forest in search of wild mushrooms — identifying a range of species before bringing our harvest back to the kitchen and turning it into beautiful dishes inspired by the land and sea around us. But this is much more than a foraging weekend. THREE NIGHTS IN HAIDA GWAII, STARTING AT JUST $1,550 PER PERSON — WITH ALMOST EVERYTHING INCLUDED. Your stay at Hekate’s Retreat includes: • Fresh, exceptionally clean and comfortable accommodations • All meals throughout the retreat • Guided mushroom foraging and culinary experiences • Salt-making experience • Nordic sauna circuit • Bikes to explore the area • Pickleball pavilion • Access to the local 9-hole golf course • Airport transfers • And the full Forage & Feast experience Starting at $1,550 per person. Flights are the only major item not included. Guests will also be invited to sign and follow the Haida Gwaii Pledge, travelling with care, respect and a commitment to supporting sustainable tourism on the islands. There are only a handful of spots remaining. OCTOBER 9–12 | HAIDA GWAII | FROM $1,550 PER PERSON Link in bio to book, or DM me directly. Come for the mushrooms. Stay for everything else. 🍄🌲🌊 by @chefpaulmoran
