We’re incredibly proud to share that BiBi has achieved three stars - the highest possible rating - in The Sustainable Restaurant Association’s Food Made Good Standard.

It marks a huge step forward from our first evaluation in 2023, when we received one star, and reflects the work the whole team has put into making sustainability part of how BiBi operates every day.

From building longer-term relationships with our producers and introducing a formal supplier code of conduct, to creating a more plant-forward menu that champions biodiversity, we’ve continued to look closely at where and how we can do better.

That progress extends to our team too, with staff meals designed around individual dietary and cultural needs, stronger workplace support, and continued investment in reducing our energy use.

“For us, sustainability isn’t about ticking boxes - it’s about building a restaurant that can have a positive impact over the long term. Moving from one star to three makes us incredibly proud, but the most important thing is that these changes are now embedded in how we work every day.”  Chet Sharma, Chef-Patron

A brilliant achievement for the entire BiBi team. ⭐⭐⭐ taken in BiBi Restaurant by @chetsharmaox

We are so pleased to be joining @mrlyan for his next Studio Lates event on the 29th of September.

As Ryan hosts Chet, they will explore authenticity vs innovation, the inspirations behind flavour and starting the restaurant.

Chet will also share some of the lessons passed down from his grandmothers and the unexpected stories from a career that has taken him from chemistry labs, to some of the world’s most celebrated kitchens and DJ booths.

Your ticket includes the talk, some of our favourite BiBi snacks, plus three bespoke cocktails from the Studio team, inspired by Chet’s journey! Please see the link in our bio and we look forward to seeing you there. by @chetsharmaox

A brief reflection on a packed summer, a new role, and the opening of a new restaurant.

Wind the clock back nine years to the day and I started working with @jks_restaurants , with my very first project set to be @gymkhanadxb. Fair to say, it took a little longer than expected.

This summer has been one of seemingly endless travel - with one or two more trips still to come - but more than anything, I’m incredibly proud of what the team in Dubai has achieved in such a short space of time.

Openings are always intense, particularly when excellence is the only acceptable standard. And >2000 covers in 13 days since opening is no mean feat.

There is still a long way to go to build the reputation Gymkhana has earned in London, but we could not have asked for a stronger start.

For now, it’s back to London and to BiBi and Gymkhana Mayfair, where the teams have done far more than simply hold the fort all summer.

New openings naturally create noise and excitement, but sustained brilliance is harder - and the successes of the London teams should never be overlooked.

Nine years on, it feels pretty special to finally see this one open.

As always, onwards and upwards. ✌️ taken in Gymkhana Dubai by @chetsharmaox

Five years of BiBi.

It’s difficult to know how to sum that up properly. Let's not sugar coat it - opening BiBi has been the hardest but most rewarding thing I've ever done.

Five years of changing minds, changing menus, good services, bad services, brilliant ingredients, questionable ideas, late nights, early mornings and a lot of learning.

BiBi started as an idea about the food I grew up eating — the flavours, people and memories that shaped me — and what they might look like through everything I had learnt as a chef.

Since then, it has become much more than that.

It belongs to every chef, waiter, manager, supplier, farmer, fisherman, friend and guest who has helped shape it along the way.

Some dishes disappeared after three hours. Others somehow became part of the furniture. The restaurant has changed enormously, and I hope it never stops changing for the better.

But the important things have stayed the same: cook with great ingredients, look after people, keep asking questions and try to make tomorrow’s BiBi a little better than today’s.

Five years in, I’m incredibly proud of what this little restaurant has become.

And even more excited about what it hasn’t become yet.

Thank you to everyone who has been part of it.

Happy 5th birthday, BiBi. ❤️ taken in BiBi Restaurant by @chetsharmaox

We sat down with global culinary director @chetsharmaox and executive chef @chefrahulrana to find out what to expect from Gymkhana Dubai (@gymkhanadxb). From the dishes they’re bringing to the city to what sets this opening apart, they reveal what they’re most excited about – including something they haven’t been able to access anywhere else yet. 👀 by @chetsharmaox

@chetsharmaox is shaping some of London’s most talked-about dining rooms.

BiBi took home a win at the @nationalrestaurantawards, and his new role at Gymkhana brings things full circle.

So we grabbed a few minutes with one of the most exciting names in London hospitality.
