Chef-Patron @chefhickey and The Duck Inn team invite you for an extraordinary evening on February 5th, celebrating the elegance and finesse of @champagne_billecart_salmon Champagnes alongside an all duck tasting menu with some of the finest Chefs in Chicago.

This dinner features a captivating range of iconic cuvées, each exemplifying the distinctive style and character that sets Billecart-Salmon apart. The night will begin with a reception of passed bites followed by a unique collaborative tasting menu including 4 courses from 4 chefs thoughtfully paired with the beautiful champagnes of Billecart-Salmon.

Happy 7th wedding anniversary to my beautiful wife, @rgaskey52. 15 years of great laughs, challenges and ventures. I would do it again in a heartbeat my love.

P.S. we had a housewarming “chic-nic” yesterday for people to meet the chickens. She crushed the chickens home and the party. by @chiliconcollin

French white asparagus with vadouvan curry beurre blanc, roasted hedgehog mushrooms, lavender scented pickled mustard seeds & nasturtium.

Roasted quail stuffed with duck+foie+truffle sausage, braised mushrooms & wilted mustard greens.

Lamb merguez sausage with fava bean hummus, fennel naan, confit cipollini onions & fresh fava beans.

Turbot cioppino with Calabrian chili tomato broth, clams, mussels, bay scallops & marinated fennel.

New Years is always a special time in kitchens. Everyone is planning vacations and resolutions. Going through the year of dishes that have been forgotten about to the bottomless freezers. Bringing in special ingredients, wines, spirits and people at there very best to make a night of dining everyone involved in will remember for years to come. Watching people, guests dining or staff, try something for the first time or the perfect bite of a dish and seeing a smile, or a “oh fuck you!”, says it all. Menu development, schedules and part time therapist are all part of being a chef. But seeing people happy to eat my food is the reason why I cook! So proud of the team and the year we’ve had.
