Sorekayi Kadubu | ಸೋರೆಕಾಯಿ ಕಡುಬು | Bottle Guard Rice Cake

❌❌No Repost❌❌

Ingredients

* 1 cup rice rava (granulated rice)
* 1½ cups grated bottle gourd
* ½ cup finely chopped fresh dill leaves
* ⅓ cup thick curd
* 1 tbsp soaked chana dal
* 2 tbsp freshly grated coconut
* 2 finely chopped green chillies
* Few curry leaves, chopped
* 2 tbsp chopped coriander leaves
* 1 tsp cumin seeds (jeera)
* Salt to taste
* Banana leaves for wrapping

Method

1. Wash the rice rava thoroughly and squeeze out the excess water. Rice rava is simply granulated rice, so wash it well, just as you would wash regular rice.
2. In a bowl, combine the washed rice rava, grated bottle gourd, dill leaves, coriander leaves, curry leaves, green chillies, grated coconut, soaked chana dal, cumin seeds, curd and salt.
3. Mix everything well and let the mixture rest for 10 minutes.
4. Cut banana leaves into small rectangles and gently wilt them over a flame to make them flexible.
5. Place a small portion of the mixture on each banana leaf, fold and secure.
6. Steam for 15–20 minutes or until the kadubu is cooked through.
7. Allow it to cool slightly, unwrap and enjoy your soft, flavourful Sorekayi Kadubu! by @cinnamondust_
