So excited to finally get @coffeethankfully on the shelves!

We have been following the work Alex Shotts has been doing for a while and are truely “thankful” to finally get to try it!

Alex runs Thankfully Coffee in Auburn, Alabama. He named the roastery to encourage gratitude toward the farmers who grow the coffee, and the business is built on long-term, repeat seasonal purchases that give those farming partners economic stability. Alex sources specialty beans for their nuance, character, and complexity, then roasts to highlight sweetness, approachable acidity, and body, keeping roast flavor from overpowering the bean. His philosophy is straightforward: support the people who grow the coffee, and let that care come through in the cup.

Available in store and online!

We had the pleasure of bringing this wonderful representation of washed Gesha in from Kotowa Farms, purchased through @fwdcoffee

Since it was a very small amount, we thought it would be sweet to first release this coffee just to our Thankfully Discord members - and they nearly swept it all away in just a day. We had only a couple bags left to make available to the public until it finally sold out. If you’d like to have access to neat selections like this that we will continue to release every so often in our Discord - join us on Discord!

The Thankfully Discord is a space of community centered around enjoying conversation, coffee, brewing, green coffee, water, grinders, and everything in between. We would love for you to share in that! The link to our Discord will be posted on our IG stories so you can access it, or you can message us directly for a link 🥰 by @coffeethankfully

We have a deep appreciation for the partnership we share with Pepe and family, and their stunning coffees from Finca Soledad. Over the past three years we have had the privilege to work with 14 coffees from Finca Soledad (and Putushio) and the latest and final selection for 2026 is here. This is my personal most highly anticipated coffee offering of our 2026 year. Finca Soledad Mejorado Wave Washed - now available on our website. by @coffeethankfully

This coffee - a standout for 2026 - is now in the ~4 week range from the roast date. Who has saved some of this for well-rested brews?? 🤤

We are getting our best versions of this coffee now that it has rested. The florals and fruit are both very defined and prominent. There’s a tropical floral attribute that is hard to pinpoint, but has been present in a few other coffees this season (namely some Peru Geshas). It’s like a green floral / tropical rainforest aroma. Not sure how else to put it. But this has become one of our favorite things to experience in all of coffee.

We have loved hearing from many of you how this coffee has strongly resonated with you. Let us know how the final brews of this one go!! by @coffeethankfully

Another Mejorado rant … again … 🤓

Fincas Del Putushio - 7 days off roast production evaluation:

Orange blossoooommmmmm 🌼🌼🌼 Wow this is a floral-forward profile.

This is technically our first time roasting “Putushio” for our menu (we previously have only roasted it for Airworks collab), though we have had numerous iterations of this coffee from various roasters. It is really a neat thing to see this coffee take a unique lane in regards to its flavor profile, even among the other recent Putushio coffees I’ve tried this season. Also to just note again - this coffee is produced by Jose, Pepe, Fransisco Vintimilla, Luchito, Oswaldo, Jon, and Maribel. ❤️

Sweet orange melon and soft orange citrus. Think cantaloupe and navel orange that leans towards sweetness rather than acidity.

The sweetness and finish, wrapped together, are a dulce de leche long linger. Some might say this is classicly to be expected from Mejorado, and they wouldn’t be wrong. Yet it’s not a caramelization due to heavy roast attributes, and it’s not dense/weighty. It’s like the flavor of caramel without the feeling of caramel. Tracking? KK. You’ll get what I’m saying when you try it. 🤝🤗

To close - this is not the full extend of everything that this coffee will present in time. Just a snapshot at early rest, off of one evaluation brew. Imagine what is to come with long rest 🥹 by @coffeethankfully

Catucai 785 from Espirito Santo presents quite the anomaly of a profile among Brazilian coffees.

We have long appreciated this variety, and feel it deserves recognition and appreciation in the industry. Catucai 785 is often very reminiscent of Kenyan coffees - red florals, red fruits, and tart acidities. We hope you get a chance to experience Edinea Sartori’s competition-placing lot, and potentially a perspective-shifting experience as to what Brazilian coffees can be like.

We were connected to Edinea’s coffee through Osito, with whom we have purchased coffees from Espirito Santo before. Edinea and her husband Valentim Fioresi produce coffees together in a serene refuge, affectionately called Recanto Feliz. The property, located at an altitude of 930 meters, covers a total of 12 hectares, four of which are dedicated to coffee production. They manage the farm together and employ family members who live locally.

Not too far from Recanto Feliz is Sertãozinho, a second property co-managed with Edineia’s brother, covering 2 hectares at an altitude of 1,150 m.a.s.l and dedicated entirely to producing specialty coffees. It was with coffee from this property that the family won 2nd place in the Washed Arabica category of the Pio Corteletti Award, a quality competition held by Nater Coop in 2023. This season, Edinea’s Catucai 785 lot placed 7th in the same competition.

The family/teams of Putushio and Soledad are some of our dearest partners. Their coffees are among the most highly anticipated we received every year. Our first release from them for the 2026 season is Fincas Del Putushio Mejorado 🙌🏽🙌🏽🙌🏽 This coffee is produced by Jose, Francisco Vintimilla, Luchito, Oswaldo, Jon, and Maribel.

Mejorado is Thankfully Coffee’s explicitly most prized coffee variety. It presents lovely florality and citrus/stone fruits because of it’s Ethiopian genetics. It also presents immense sweetness due to it’s Bourbon lineage. It is, as we like to assert, the pinnacle variety. We have been on a mission for years now to present this variety to the world.

This season’s Putushio lot is elegant, refined, complex and aromatic. We find an orange blossom florality coming out front in the sip, and washing over the palate from front to back. The fruit centers on a golden-like pear orchard fruit, and in classic Mejorado fashion, the sip finishes with a silky and lingering dulce de leche finish. What more could we have hoped for?? Our first 2026 Mejorado of the season is a tride and true must grab. Now available on our website in Standard and Extra Light roast profiles. ❤️ by @coffeethankfully

It’s drop week ⚡️⚡️⚡️ Here’s what is coming to the website this Thursday, September 3rd:

@fincas_del_putushio Typica Mejorado, Summer ‘26 harvest - Our FIRST 2026 Mejorado of the season. Thankfully explicitly prizes Mejorado above all other varieties, and our first release for the season plainly explains why: Orange blossom florality + golden pear + long dulce de leche lingering finish 🍊🌸🍐🍮🍬 The harvest this season has been very scarce, so we are extremely grateful for a small amount of this coffee this year ❤️

Ethiopia - Chelbesa G1 washed, sourced via @croptocup - Our second new season Ethi release is stellar, aromatic and vibrant - Yellow nectarine + wildflower honey + orange zest 🍑🌼🍯🍊

Espirito Santo, Brazil - Edinea Sartori - Competition Catucai 785 - Esprito Santo profiles are an anomaly among coffees from Brazil - They quite resemble Kenyan coffees, and Edinea’s competition lot is presenting hibiscus + cranberry + candied grapefruit 🌺🍒🍬🍊 by @coffeethankfully

Origami Pinn Recipe:

12g coffee, medium-coarsely ground - 4.0 on ZP6

Water at 198F

30g bloom for 0:30 - pour close to the bed and wide circles

Pour to 110g - again close to bed and heavy agitation

Pour to 185 in the same way, let drain

Tbt should be 1:30-1:40

We’ve been really enjoying this recipe and finding super full and clear flavors even at such short brew times.
