So excited to finally get @coffeethankfully on the shelves!

We have been following the work Alex Shotts has been doing for a while and are truely “thankful” to finally get to try it!

Alex runs Thankfully Coffee in Auburn, Alabama. He named the roastery to encourage gratitude toward the farmers who grow the coffee, and the business is built on long-term, repeat seasonal purchases that give those farming partners economic stability. Alex sources specialty beans for their nuance, character, and complexity, then roasts to highlight sweetness, approachable acidity, and body, keeping roast flavor from overpowering the bean. His philosophy is straightforward: support the people who grow the coffee, and let that care come through in the cup.

Dear Farmers,
I wanted to share my appreciation to all the smallholders who contributed to the Kamagogo washing station. Kamagogo washing station opened in the 70s and is one of four washing stations operated by the Kiru Farmers’ Cooperative Society. Kamagogo services approximately 1000 smallholder farmers. I appreciate this washing station because it also assists producers in pre-financing, agricultural inputs, and in teaching Good Agricultural Practices. I have tried coffees from this washing station many times over many years and it is always sensational.
Smallholder farmers are often not recognized although they make up a majority of coffee farmers globally and are often the most disadvantaged receiving very little share of the value their products create downstream.

due date brewwww!! baby still cookin, daddy still brewin ;)
my thought this morning… “if our baby girl came today, what would i want to tell her i brewed the morning she came into this wonderful world?”
this coffee, this brewer, this recipe is it! a standout from thankfully… a wave washed mejorado from intag, ecuador produced by pepe jijon with finca soledad. truly wonderful, brewed on the orea z1, delicate but juicy, bright and sweet, green apple, pink lemonade, floral bouquet, candied sweetness. yeah thank you alex for this coffee, it’s amazing.

brew notes-
coffee: wave washed mejorado from ecuador produced by finca soledad and roasted by thankfully
brewer: orea z1
dose: 15g
grind: a little courser at 9 on fellow opus
water temp: 198F (cooler because of zero bypass)
recipe: with melodrip on the whole time, 40g bloom for 30sec, the 2x100g pours up to final weight of 240g (1:16 ratio) maintaining relatively light circle pours to not disturb the bed with the final brew time being 2:40
