The warmer weather this weekend makes me feel like spring flavours. This is a courgette and tomato tart with wild garlic pesto.

I've used shop bought puff pastry and spread a thin layer of wild garlic pesto on that. Then topped with finely sliced courgettes and tomatoes and baked in the oven. Finally, I've topped it with some fresh rocket just before serving

Can't beat toasted sourdough for breakfast. What's your favourite toast topping?

This loaf is a white and wholemeal mix.

-100g wholemeal starter
-250g water
-7g olive oil
-250g white bread flour
-100g wholemeal flour
-7g salt

Tofish and chips! It's the perfect treat meal and the "fish" is made from tofu which is seasoned and covered with a sheet of nori and then coated in a batter and fried!

Vegan sourdough pizza.

This is a simple sourdough pizza base. It contains 80g starter, 200g white bread flour, 200g plain flour, 240g water and 10g salt. Leave it to rise in a warm place for a good few hours until it's nearly doubled.

We've topped this with a tomato sauce, some vegan nduja, fresh basil and superstraccia from @juliennebruno

The pizza was cooked in the ooni, which definitely turns out some of the best pizzas!

Basil aubergine

This is packed full of flavour and pretty straightforward to make. Cut the aubergine into bitesize pieces and fry in a little oil until slightly browned and nice and soft. Then add in a little minced garlic and fry for a further couple of minutes.

Then add in three tbsp soy sauce, 2 tbsp shaoxing wine, 2 tbsp brown sugar, 3 tbsp water and a tsp of cornflour and mix well. Simmer for a few minutes

Add in two handfuls of basil leaves. Mix well and then remove from heat.

Serve over rice and top with some peanuts and chopped spring onions if you fancy.

Can never get enough of bread.

This is a pretty standard loaf, containing 100g starter, 250g water. 10g olive oil, 275g white bread flour, 75g malthouse flour and 7g salt.

Gotta love salt and pepper tofu. Grind up Szechuan pepper corns and some black pepper corns. Mix with cornflour and salt and coat pieces of tofu in the mix. Fry until slightly crispy.

We've served these with rice and some Pak choi and red peppers. It's a pretty quick dish to make and fairly light to eat too.

Start the week with a fresh loaf. I love including malthouse flour as it adds such an interesting flavour and texture. This loaf contains a mix of white bread flour and malthouse flour

This has got to be the best way for using up the broken biscuits in the biscuit tin. Vegan tiffin/ rocky road style cake!

Break up around 200g of biscuits until in fairly small pieces. Combine 100g of vegan butter, 60ml of golden syrup 20g of cocoa powder and a couple of tbsp of light brown sugar and heat gently until everything has melted together. Add the broken biscuits, a handful of raisins and a handful of vegan marshmallows and mix well.

Add to a lined, deep tin or dish and press down. Pop into the fridge to set.

To make the topping, melt around 150 of dark chocolate and then pour over the top. Put back into the fridge to set.

Eastern spiced lentils from the Easy Vegan Bible.

These are green lentils mixed with tinned tomatoes, harissa, onion, cumin and cinnamon. Served with pistachios, flatbread and some houmous
