Every family has one. 

They’re safe. 
Easy. 
You’re not really required to think or be creative. 
Then one day you grow up, rinse and repeat… OR you absolutely cannot fathom more of the same fortnightly meal rotation. 

Years ago, I did a live series on my Facebook called: The Staple Dish Circuit. Inspired by so many people around me who hated thinking about what to cook, I started a little series. 

This is one of those meals you need to add to your staple dish circuit… The humble roast chook! 

Basically, preheat your oven to 220°C and get a chook… 
To a bowl add butter & whatever herbs tickle your fancy (fresh or dried). I went with sage, thyme, rosemary from my garden and fresh garlic. 
Mix it up, then spread that under the skin of the breast of the chicken. 
Prop the chook on onion sliced thickly. 
Stuff the chook with lemon & fresh herbs if handy. Could use garlic too. 
Oil up the outside & season with whatever you have. 
I AM OBSESSED WITH @meglachef COUNTRY SPICE BLEND!! (It’s good on everything). 
Add about a cup of stock or white wine or just water to the bottom. This helps keeps it nice and juicy. 

Whack it into the oven for 12 mins to crisp up the skin. 
Then drop the temp back to 180°C and cook for around 1 hour and 15 mins (size of chook will impact the time).

Enjoy with some roast veg! 

BONUS…. when you’re done eating, pour all the pan juices, carcus, lemon, onion and herbs included into your slow cooker. 
Cover with water. Add in some bay leaves & peppercorns. Slow cook on low for 24 hours. 

Now you’ve got a delicious broth for soups, risotto, a base for a creamy sauce or drink it as is - thank me later! 

I freeze it and use it as needed. 

SAVE this and actually make this. 
You’ll surprise yourself!

You know you need this 🔥🔥

Lunch fit for a queen 👸 

Sourdough bread (toasted) 
Drizzle of good quality olive oil
Tin of tuna in olive oil (I love @goodfish.official )
Capers (chopped)
Red onion (diced)
Fresh dill
Cottage cheese (I love @barambahorganics ) 

Dump it into a bowl, mix it up & slap it on your toasted sourdough. 

Enjoy with a big smile on your face because that shit is GUUUUD 🤌🏼

My 3.5 year old loves making and eating choccy Easter Eggs aka Easter Gummies. 

Instead of cocoa or cacao powder, we use carob powder which is naturally caffeine free and has the bonus of some fibre too. It’s also naturally sweeter. 

Chocolate comes from cacao beans (from a cacao tree). Whereas carob comes from the pods of a carob tree. 

I also use @nutraorganics gelatin for this recipe which has a number of health benefits - supports the gut and digestion, great for hair, skin, nails, sleep, joints… you name it 😆 but really, go have a geeza at all the benefits of a good quality grass fed gelatin. 

We buy carob powder & gelatin locally from @thespudshed_trafalgar but you can get it online or from your local health food shop. 

Here’s a fun little recipe you can whip up for your littlies or for yourself! 

Save this because it’s not just good around Easter 😜

EASTER GUMMIES 🐰
1 tin of coconut milk 
4 tbsp gelatin
2 tbsp raw honey
2 tbsp carob powder 

Method: 
Add your coconut milk & gelatin to a pot. Mix through. 
Add your honey & carob powder. 
Whisk it on a medium heat until mixture becomes smooth. 
Pour into moulds (these ones are from @kmartaus) or a deep dish. 
Leave to set in the fridge for 2 hours. 
Pop them out (or slice and lift out if using a deep dish) and enjoy ☺️ 

Good for a week stored in the fridge - if they last that long!

Black Bean Blender Brownies 🫘 

1 can black beans (rinsed)
1/2 cup rolled oats 
1/4 cup carob powder (can be subbed for cacao or cocoa but I like carob as there’s no caffeine which is a better option for little people, and to be honest I love the taste)
1/2 cup of maple syrup (can be subbed for honey) 
1/4 cup melted coconut oil 
2 eggs
1 tsp baking powder 
1 tsp vanilla extract 
1/4 tsp salt 

Pre-heat oven to 175°C 
Whack some baking paper into a baking dish 
Pop all ingredients into your blender & blend up for 10-15 seconds or until it’s kind of like a runny paste consistency. 
Optional - but fun - sprinkle some choc chips or cacao nibs on top. 
Pour into your baking dish & bake for 25 mins 

This has been a hit in our house and with our friends (and their toddlers too). 

Great for lunch boxes, long car rides and goes well with a cuppa! 

You’ve gotta save this so you can make it. It’s so simple!

2 ingredient chocolate 🍫 

We all love cacao as a better option to sweetened cocoa powder. But it still contains caffeine. 

So why not try carob powder instead? 

Naturally sweet and caffeine free! 
While technically it’s not chocolate, it has a very similar appearance and taste. 

Which makes it a great alternative for toddlers (or adults who are caffeine sensitive). 

Blow the socks off your kids & yourself by giving this simple & fun recipe a go. 

You will need: 

- 1/2 cup coconut butter 
- 2 tbsp coconut oil
- 3 tbsp carob powder 

1. Melt coconut butter and coconut oil in a pot on low heat. 
2. Add in carob powder and continue to stir. If too thick, add some more coconut oil. 
3. Pour into moulds (I used the gummy moulds I got from Amazon) and used my flat blade to tidy it all up. 
4. Refrigerate for a few hours. 
5. Taste test! 

Go read up on the health benefits of carob and save this so you can make them too.

Did you know it’s actually quite simple to make mayo at home? 

Whack the ingredients into a blender or bowl & blend or use a hand mixer. And you have seed oil free mayo.

Easy Peasy Mayonnaisy 😉

Look, I don’t know what it is about cherries… 

BUTTT since my mum made a Black Forrest cake for Pop’s 80th back in August, cherries have been hot on my mind 🥵

Maybe it’s pregnancy? 
Maybe there’s something in them I’m lacking or needing. 
But I’ve been cherry obsessed since. 

So what else do you do at 41 weeks and 4 days pregnant? 

You make a Sourdough Discard Cherry Cobbler 🍒

She came together in 5 mins, took me 35 mins to bake. And tasted like H E A V E N 😍😍

I used organic pitted cherries I found in the frozen section from @thespudshed_trafalgar 

I can’t take credit for this recipe as it’s not mine. It’s one from @thepantrymama 🥰
